At a distance one might think the center taxiway was 25C! As there is no 25R, why does 25C exist? Would it not make more sense to call it 25R?

Its because there is also an 25 R, there are 3 Runways. If you look on the map you can see a third runway in the same heading, but quite far away from the others

Why the sudden change to 25C?

It is a common procedure in Frankfurt to swing 25L arrivals to 25C. 25C is the normal departure runway. But, if there is no departure delayed, arrivals can swing over on short notice. Due to noise abatement procedures, a direkt clearence to the 25C ILS is not possible anymore.
