​@@Nobody-ob3eg In countries like Korea where this dish is common, you can purchase meat specially cleaned and cut for this purpose so it's safe. Similar to how you would get sashimi grade raw fish (e.g. salmon) for eating raw.

what does the flavor and texture taste like? i’ve never tried raw meat before but korean food is so good, so i’m pretty sure it’s definitely delicious!! just curious on the taste

It really doesn't matter, especially in his case. The meat is gonna be 100 percent raw no matter how you cut it. If thinner is your preference, then go for it. However, I am curious why you feel it NEEDS to be thin cut. What would be different or than the thickness/thinness. Answer if you like

Certain meats are "cooked" when u add acidic components to them. It kills any bacteria and sterilizes the meat in a natural way adding flavor and allowing it to be safe and delicious

if you have access, find a local farm that is all grassfed and treats the animals right. This will ensure a higher quality. I personally would NEVER eat factory farmed meat raw.

In Korea, yukhoe is made with freshly butchered tenderloin or sirloin. It's delicious with just sesame oil, soy sauce, and sugar. I prefer not to add egg yolk when I eat yukhoe.
