Another tip to AVOID freezer burn...the rule I learned is cook, completely cool, and then freeze...any heat in the food while covered will cause condensation inside the dish which then turns to ice when frozen!

Melissa Mikaelsen I use the Food Saver Vacuum Sealer and have never ever had freezer burn. I completely cool my food (freeze casseroles in the dish I will cook it in and then remove it & slide it in the vacuum seal bag and seal it). I write reheating instructions & pan size on outside of vacuum sealed bag

I am a fan of Food Saver vacuum packaging or like. Another thing is to pull a vacuum on refrigerated foods that you use a lot of. I buy dry black beans, soybeans, lentils, peas, pressure cook them and then store them in mason jars that I pull a vacuum on AND pack them still while hot so to increase the shelf life. But for regular used items, you can pull a vacuum with your Food Saver on your foods you keep in jars with special "vacuum seal" universal lids and food will not spoil nearly as fast.

Thanks for the video! I have a few questions and would love if you answer them, listing them down below: 1. I'm also planning to cook & freeze meals for a month. Should I buy a dedicated deep freezer for it or my refrigerator's freezer compartment would suffice? I have heard that deep freezers (especially chest freezer with manual defrost) might be a better option, would love to hear your take on it? 2. I'm also concerned about potential food poisoning risks if food is kept for too long, or if compressors auto stop and food is melted/thawed a little bit during the day. I think refrigerators might do that instead of manual defrost deep freezers. Again, would appreciate your views on it. 3. Have you stored kneaded dough ever? I have heard that it goes bad really fast Thanks in advance, have so much more to ask but these are the top 3 questions!! Would appreciate a reply!

As far as freezer burn is concerned. I make meals and freeze them in light weight cheap throwaway containers lined with cling wrap and leave a little extra so you can lift it out of the container. Be sure the size of the freezer container will allow the frozen meal to get placed into the vacuum sealer bag. I usually buy the kind of bag that can be cut to the size you need, vac seal them up and return it to the freezer. As she said be sure and mark what the contents are and date them.

I NEED THAT BOOK! Just a quick question, if you are freezing in quart jars, how much "head space" should you leave? I'm concerned about too much and getting the freezer burn issue or not enough and breaking the jar or something. Perhaps freezer bags are easier in the end LOL
@KarrieTruman
@KarrieTruman 6 жыл бұрын
Hi!! Great question! I like to leave about an inch of headspace, and to help keep freezer burn off you can freeze it until solid press a piece of plastic wrap down inside touching the frozen liquid, then add the lid. Honestly I love the freezer bags more, they thaw so much faster and I seem to always be in a hurry come dinner time. :)

Great tips, Karrie! What is the best way to remove air from the packaging? Also, love your ideas about creating freezer meals for smaller families. Thank you! :)
@KarrieTruman
@KarrieTruman 6 жыл бұрын
Thanks Liz! So there are several methods to remove air from the packaging, and I'll have to do a separate video just on this (thanks for the idea!) For freezer bags - you can press the bags food while you seal, almost right to the top and then seal to get the most air out. Some people also just press the bag as much as possible, then seal. And then there is the straw method. Add a straw to one side of bag, Seal the bag all the way up tight next to the straw, then suck the air out, then quickly pull the straw and seal. It works great - almost like vacuum sealing. Which reminds me - you can use a vacuum sealer too! :) For baking dishes, I press the air out using plastic wrap on top first, then cover in foil. Hope that answers your questions!

Question - So if a meal calls for pasta. Should I undercook to El dente, so during the warm up step, your pasta isn't mushy?
@KarrieTruman

I usually cook pasta 5-6 minutes, so its mostly cooked, but still hard kind of, then cool quickly and add to pasta bake dish to freeze. Then when it's baking it will not end up being super mushy!
