AD | What better challenge for the boys than taking on one of the most respected cuisines in the world?!
Today we’ve challenged our 3 normals to work together to create a 3 course meal using the very best of French produce. And they’ll need to pair each course with delicious French wine! But they won’t be going in blind - they have to trust the knowledge Jamie picked up on his recent trip to Paris with Taste France.
As if that isn't enough, their attempts will be reviewed by French chef Franck Pontais, and Ebbers and he have French Cuisine skills badges to give away…

Having a chef who specialises in the cuisine you're cooking tell you that they'd pay big money for your meal in a restaurant is an incredible compliment.

Literally I had such a big smile for Jamie. He's usually the one that suffers when it comes to the more technical aspects (but also is always a BIG flavor man). Its so great to see him make a dish that a french chef says he WOULD serve in his restaurant.

Definitely not how a chef in a real kitchen would react. The 90s United Kingdom t.v. show chef is more how someone being taught in a restaurant setting would be treated. I'm sure its probably more like a combination of the 2 styles of teaching.

I feel like Chef Pontais is an absolutely amazing teacher-- he was gentle and kind, but had a good sense of humor! And an excellent sense of when to stop ribbing Mike, and give him some gentle encouragement. I would absolutely love to see him return in a future video. All the normals did fantastic, but Jamie really pulled through on the leadership!

He was awesome considering Sorted have started scripting some of their 'badges' and 'winners' for battles. The reason why I keep watching is due to honesty, I'm from Hertfordshire and I feel these guys are from there or there abouts, so I know the banter. I loved it when Ben rescinded Barry's badge (that was not planned!). Never ever give up the genuine nature to your show.

I've said it before, but I think Jamie has really really REALLY benefited from the badge challenges this year. He's consistently more organized and more thoughtful about his food, and his progress and effort are clearly visible.

Jamie absolutely smashed this one out of the park and deserved every moment of praise. Of course he had the benefit of going to France, but there was no guarantee he would put it into practise in such a wonderful way. Bravo!

Additionally, I think the value of the trip itself is a bit overrated. Sure, it is definitely a boon, but even if you take a crazy amount of notes, there's a lot of things that will be lost at the end of the day, not to mention weeks later. In the end, it is about putting it in practice where it counts. Jamie may have done most of the research and planning, but there are plenty of sources (the internet, a certain ministry, etc) who could have assisted every single one of them with the practical implementation.

@@Aviertje Except the additional research is rather pointless to do for Baz and Mike when Jamie is the one deciding what the dishes will be and what they will be made of. He based the dishes and techniques/flavours round specific experiences he had on the trip. So general research probably wouldn’t have helped the other two out.

The food team likely largely developed and ideated a lot of these recipes, with the boys, as they do on a lot of challenges like this. You can notice it in the way they sometimes talk about what they are going to do next - it’s not coming from them. Nothing wrong with it, just wouldn’t be so quick to congratulate Jamie , likely some unsung hero behind the scenes 😀

I worked for a classically trained french chef, he was allot nicer than his reputation would have you believe. I found that if I did exactly what he told me I was golden if you never cut corners or got lazy he would never never get angry even if it didn’t turn out the way he expected

i mean,that's the thing. he has the experience so if you follow his instructions to the letter he can only blame himself for not explaining it right, if you find a better/more effective method? great test it out when you're not in the middle of the rush hour and you dont have as much of a time pressure on ya and can do it again if it fails, or just after work hours. it's when people go about it in their own way when they dont have time to make up for any mistakes that the headchef can get pissy but that's usually more about the customer than you contradicting the chef.

@@goranpersson7726 Don't forget that you can experiment with your own lunches! That's always been my favorite time - I remember my first job as short-order/pizza cook. I would try different ingredients pre-cooked on the flat-top griddle. The place never changed its ways, but I learned that cooked mushrooms in the sauce of a pizza contribute much more flavor than throwing some slices on top. Also...this guy makes me rethink my racism against the French. Oh well, I've still got the Spaniards and Italians to despise.

Wonderful episode. Love the serious constructed criticism of chef Franck, not too easy on the guys but also fair and helpful. I vote for him coming more often on the show. Would love to see him cook and share some lovely ideas for a homecook. Maybe even a friendly chef vs chef against ebbers? 2 dishes, one french one british dish so no one has home turf advantage. Cheers, keep on being awesome guys!

I would like to see some lessons on plating. Jamie seems to do wonderful dishes and always falls short on plating. I think that's an issue with a lot of people, so that's why I'd like to see, not just one but several lessons going forward. I really enjoyed this episode as I felt the guest chef was extremely helpful, encouraging, and kind which was nice to see as the guys had to be nervous (but didn't show it too much). Congratulations to Jamie! You deserve it.

That's a great point! There's always some flack for poor plating but never any teaching moments to remedy it. From what they've said in the past, I don't think it's soemthing Ebbers is particularly great at either though, so perhaps they could get someone in who's really good at it to give a maaterclass

Jamie definitely earned a basic planning badge if he doesn't already have it. The chefs had nothing but praise for thr wine pairings and the dishes were all praised.

its always a little hard to watch the outside chefs come in and judge, especially if they aren't used to the kind of banter you guys do on a regular basis, but this one was really fun to watch because he seemed to just roll with everything lol (not all of them are difficult, its just the awkwardness that comes with it sometimes)

I feel like Barry thinks time limits are more time recommendations these days. He just ignores them. The Guest Chef was the perfect guest. He made good comments. Explained things well. Was genuinely interested. Not at all degrading or rude. I hope he returns for more. Wonderful job!

Agreed. I completely expected the badges to be for all or no one, even though Barry clearly delivered something that was not of the same standard as the other two normals. Seeing the badges be awarded like that, and the badges not being tactical to boot (because hey, keeping the normals really close is best to build up hype among viewers!) is really nice.

I love these collaborative videos where you're trying to make one cohesive dish/menu, rather than in a battle format. Ben's B&B, the giant fish pastry from the 1914 cookbook, even the valentine's day cooking battle from a few years ago to some extent! Team work makes the dream work, babey!

Ive got a Chem exam tmrw I gave myself a half an hour break. This is 100% worth it. Chef Frank looks quite intimidating tbh , i wouldnt speak in front of him out of fear of mispronouncing words😂. Loving the confidence, Barry Mike and Jamie, well done 👏🏽🤭

Having watched the boys for years, I feel like this is a perfect example of how unorthodox Jamie can be. Almost every time he steps out of his comfort zone and does something that doesn’t scream “Jamie did that” he absolutely crushes it. But when he sticks to what he knows, all of the MEAT, it’s a little lackluster. They’ve all grown so much but Jamie impresses me the most.

Chef Franck was such a great guest! He brought the precise palette, but also clearly a love of food and of sharing French cuisine. I think it made the normals actually work together, which was nice to see!

I loved the video concept with a specific cuisine like this! Maybe there could be a collab with Koreanenglishman who always shares Korean cuisine to friends and people in the uk. Later they could come on to sorted as guest judges for a Korean cuisine cook off with Gabie Kook (Josh’s wife) invited along as well as she was second place in Masterchef Korea and is always helping the team prepare Korean food for guests!

The first time I went to the UK, I was surprised by how sweet everything is! I think Barry made a dessert by English standards instead of French. Loved this episode! So cool that you guys got to work with the French Government :)

As a French, I was really happy to hear Chef Franck say the thickness of the galette was not to his liking. Galettes are the regional staple in my area and they should be much thinner than what Mike did.

Well, this was fun.... everything looked delicious.... the trifle looked divine Barry, even if was bit too sweet... well done to you all... the guest chef was lovely, he said plenty but in a nice calm non screechy way that I really appreciated. He explained why something worked, why it didn't, or why it worked but was not to his personal taste... I hope he will be back again at some point. And Jamie, very good leadership qualities displayed today. Mike, I loved the idea of your dish, I will try it over Christmas for certain....

I really liked this format having the guys work together more and be constructive together, I think this challenge has just shown how well they can do with the right amount of research! Would be interesting to see this done with Mike or Barry having to do some research and being the head of the group

Wow ... well enjoyed. I found this Chef Review to be the least cringe and most constructive of all to date. Chef Franck gives a very good review, and good feedback through out. Worth listening not just to what he said, but how he said it and importantly what he left out. When learning French cooking in college, what I learned is that 1) people first eat with their eyes, presentation is very important, 2) people eat foods not symphonies, choose well but don't complicate it, and 3) if you do complicated steps, make them your first ones so every step after is an augmentation of the one before (mother sauces are the most well known of this process, Mike had the idea and Chef Franck said it was not Mayonnaise, meaning - make the Mayonnaise first then bring it to where you want it to go).

Yeah, it's pretty clear he's also done quite a bit of passing the torch, teaching new chefs and cooks and giving constructive criticism on new dishes and variations they come up with. Very much a good job for the team, even if Barry got a little too sweet in the end.

Jaime could have easily got a "Research" and "Wine Pairing" badge from this episode, Mike could have also got a "working under pressure" badge for having to work right in front of the judges because that has to be nerve wracking.

To echo so many other comments Chef Franck was amazing, and I really hope Sorted can find another way to work with him in the future. Secondly, Jamie knocked it out of the park with applying what he learned to the menu. Can really tell that he was genuinely excited to do the challenge as best as he could.

My favorite Sorted episode since I've been a subscriber. I loved the noticable earnestness of the lads, eager to impress a highly regarded chef with their accumulated knowledge and skills. You could tell Jamie was bursting with pride at the chef's high praise. Mike's comments about the value of the criticism were as gracious as they were heartfelt and sincere. Well done, boys! ❤

The tension was felt - it must've been so nerve-wracking to cook in front of a real French chef!! The finished dishes looked marvelous, and it was such a delight to hear the chef enjoying them as well. Well done guys! Another great episode!!

Classic example of don’t judge a book by its cover. Looks intimidating , but so gentle when giving constructive criticism. Not overeacting, not too subtle, just perfect.

Same, although thinking back on the time(s? I dont really remember if they did it more than once) they did make "german inspired" food it was rlly stereotypical 😬 I know they can do better 😩

Really impressed by Jamie in this episode, with the planning and wine pairing, but also I felt like he proved he's able to go beyond the tried and true pairings (like bacon with everything 😂)

I’m in love with that trifle! As a child of the 80’s, Birds trifle was always the go to for my family and I kind of love the ‘cheapness’ of it. I’m planning to have trifle as the dessert for my wedding reception and something like this would be fabulous! It’s trifle “Levelled Up”!!!!

Loving the visiting chefs series. Really enjoyed watching the 3 dishes with the sequence Mike, Barry and Jamie. Can't wait for you guys to explore Asian food maybe Japanese or Korean?

What I found really interesting was the French food on their trip and the idea of "break the rules", I seem to have had a stereotype in my head that all French food is very traditional and precise, but some of the variation and pairings on their trip looked amazing.

Awesome episode! Will briefly repeat what has been said in other comments: Chef Pontais was a great guest; good constructive criticism and willing to jump into the goofy fray now and again. Jamie was awesome this episode: his skills were spot on and his presentation to the camera was even - dare I say it - professional! Mike being nervous the whole episode was adorable. A few other random comments: That wine glass Ebbers was drinking out of at the end looked comically huge! Does he need to cut back, or is he just that small? And while Baz may not have gotten a French Cuisine badge, he definitely gets the badge for best hair!

Now we need this exact same video with two more different countries and Mike/Barry each being the one who did the research. Jamie seemed really in charge during this and it was pretty nice to see. I also loved the guest chef. I'm used to french chefs being snooty and holier than thou, so to hear him give proper criticism AND praise was just suuuuuuuuper nice. He was so much better than I thought he was gonna be.

It was so lovely to see them getting excited for each other at the end. Underneath the jokes and banter, there is clearly a lot of love and I think this was a great example of it.

I really enjoyed how much the chef got involved, he seemed like he really wanted to be there and all of his criticism was fair and light-hearted. Sorted genuinely has took me on a journey in my own cooking and watching the normals do the same is fantastic

I really hope they'll release the livestream of the "Pass it on live" a few days after its been streamed. Would love some more content to have running in the background as I work :) Not to mention, I'd love to see the carnage that I missed due to other obligations.

With you on that one, makes me grind my teeth even thinking about it, same with watching someone use a knife on one of those horrible glass "chopping" boards! horrifying. I remember years ago a friend & I heading back to his house & the look on his face when he discovered his wife's friend frying onions in his special crêpe pan... thought he was going to explode on the spot!🤯

I remember a Feast Your Ears podcast where a joke was made about an apple and red onion pie, and now Jamie's made an onion and apple tarte tatin and it looks like it worked! Amazing work, besides the unbalanced trifle. I'm glad Jamie admitted that that might have been partially his fault, but Baz should have left time to taste all the elements together to adjust as needed.

I think it's one of his weakness when it comes to cooking. He focuses more on the style versus the substance. Hopefully, he'll take the Chef's criticism into consideration for future recipes.

I would LOVE Chef Franck Pontais back in the SORTED kitchen. It was so wonderful to see honest and genuinely constructive feedback instead of just overdoing a strict chef stereotype for the camera or being lenient because it's youtube. Perfect balance, this is one of my favourite videos.

This video was such a refreshing perspective on French cooking! It's so lovely to see even classically-trained chefs willing to embrace innovation within traditional cooking methods/styles and give genuine feedback about the taste (not just bashing the dish because it deviates away from the norm) I'm so glad I clicked on my first Sorted video two weeks ago, absolutely OBSESSED!!

I love the guest chef episodes, always fun, always brilliant. I really enjoyed Chef Franck, his humor, his expertise, his involvement, and his interest in exactly what the boys were doing made for such a sincere yet light-hearted dynamic coupled with his "great positive criticism" made for an excellent learning moment for the boys and us viewers. I would love to see another episode where Chef Franck returns, maybe with a different episode format like a Pass-It-On. Also, the blooper was golden.

I love that Mike & Barry we’re taking advantage of having an expert there to double check that they were doing things correctly, but Jamie was just being Jamie. And the chef loved both approaches.
