Bonjour Marie! Yeah, I could tell that the place mostly did Southern US food not specifically Louisiana food. I did see some Louisiana dishes, but mostly it seemed more "Southern" than "Louisiana" with the chicken and waffles (which many say comes from South Carolina, but was actually first invented in Pennsylvania,) the Nashville Hot style (Tennessee,) and the Yams (the majority of yams eaten in the US are grown in North Carolina.) The fair food looked amazing, and I bet it smelled incredible with the meats and fries cooking outside like that, lol! Thanks for sharing! Hi Marie's Mom! Bonne journee! ~Be Blessed

I was thinking the same thing. I've never seen a not-fancy Louisiana restaurant that didn't have a bottle of hot sauce (mostly cayenne pepper in vinegar) on every table.

@@aquilapetramShe mentioned that it had been open for 10 years and had to make some changes to appeal to Parisian diners, so I guess going "Southern Style" as opposed to "Louisiana Style" is what they had to change? I also didn't see much in terms of "soul food" as advertised on the window...maybe the Mac and Cheese?

Real yams are grown in Africa and are/were a dietary staple. When enslaved Africans were brought to the U.S., there were no actual yams here but the closest things were sweet potatoes. So they prepared them in the style of yams and they came to be known as such in the states. But if you look up African yams they are much larger and colored/shaped differently.

the yams in america are not sweet potatoes Although they may look similar to sweet potatoes, they are an entirely different species (yams belong to the Dioscoreaceae family and are related to grasses and lilies, and sweet potatoes belong to the morning glory family) and not even remotely related.

@@TheShootist In the South, the terms yam and sweet potato are very often used interchangeably for the reasons I described. What she was eating in the video was sweet potatoes, labeled at the restaurant as yams... for the reasons I described.

In the US, the people who sell donuts take the punched out centers and sell them as 'donut holes' Same stuff, just bite size. Belgum donuts look to be about 3 times bigger.

@@FourFish47 Or like beignets in New Orleans (Cafe du Monde on the river in the French Quarter/Vieux Carré is open 24 hours a day, so you can have beignets and chicory café au lait at 4-5am, or whenever you get tired of drinking).

Gumbo originally was whatever you happen to have on hand thrown into the pot, and hush puppies was just for keeping the dogs happy during the meal.

Sure, but a critical ingredient in gumbo is okra, a vegetable originally from subSaharan Africa that I doubt you see much in France outside African markets. A lot of people find the texture of okra somewhat slimy (including me).

Great Video and always nice to see you and your Mom enjoying yourselves and laughing! Your friend was wrong about the Yams. Sweet Potatoes and Yams are actually different even though they look kind of similar. Yams are firmer, drier, and have a rougher dark bark like skin, and light colored flesh inside that's less sweet and more starchy. Sweet Potatoes have a more golden/copper colored skin, and the flesh inside is sweeter and orange colored. The ones you were eating were actually Sweet Potatoes with the orange coloring they had. Most places mistakenly call them Yams but they aren't.

Although they're often prepared in similar ways, sweet potatoes originated in tropical South America (they're relatives of the morning glory) and yams originated in West Africa. In botanical terms, they're not closely related at all.

U should go to Baton Rouge on an saturday night to see a LSU football game. 100k in the stadium, 300k outside the stadium partying and tailgating, best cajun food ever because real cajuns are cooking! Also hear the cajun french being spoken!

if you're heading to New Orleans you have to do the 53 restaurant food crawl that Homer Simpson made so famous when he did all of them in a day. unfortunately, i doubt King cake will be on a menu when you get there as its only a Mardi grai thing. but definitely Commander's Palace, Cafe Du Monde, and Brennan's for Banana Foster. you also shouldn't miss Willie Mae's Scotch house. unfortunately the original burned down in a big fire but the restaurant has been operating out of a satellite restaurant until the old building gets fixed up and modernized.

Bonjour, Marie. Yams are in the Lilly family and come from Africa. Sweet potatoes are related to marigolds and from the Americas. In the US, they are pretty much interchangeable as most people can't tell the difference. Say hello to your mom.

Marie, the chicken waffle must have been good because you ate it all! Also, the place at the fair in your hometown looked like some southern US BBQ. I was in France last November, tracing my roots for a few days before doing a river boat tour in Bordeaux and visiting Paris. My roots journey took me from Pau to Lembeye. On the way back to Pau, we stopped in Arzacq-Arraziguet. We had lunch at the Café Des Sports. We had 5 course meal including the chef's award winning cabbage soup which included a ham hock or pork knuckle. There were 3 of us but unlike you, we could not eat it all. My favorite food anywhere is where locals eat. Thank you for your exciting videos.

I like to guess where you are going next. So far I have been 100% incorrect. But that has not stopped me yet! So, I predict Scandinavia. (That gives me 3 or 4 countries in one pick - Norway, Denmark, Sweden but some include Finland). The video of the roasting meat at the fair impressed me! I grew up in S.E. Texas. The "yams" that you had are "dark skinned sweet potatoes" but they ARE what we in the South call "yams". They are sweeter than other sweet potatoes & yams. At holiday dinners it's common to have sweet potatoes baked in a casserole dish with a sugary glaze & melted marshmallows on top. My favorite gumbo is "Gumbo Ya Ya" which is a chicken & sausage gumbo. My favorite restaurant where I order gumbo ya ya is at Mr. B's Bistro on Royal St. in the French Quarter of New Orleans. I also have to have one of their famous "Brandy Milk Punches" made with vanilla ice cream. It's like a vanilla milk shake with a kick!

The food prices have skyrocketed in NOLA the past couple of years. I suggest we contribute to the cause the next couple of weeks because many are underestimating that costs in New Orleans now. Also many places will allow a split on 1 gumbo order where you can share a single order with your companion. There are in general 2 types of gumbo: 1) thinner with a lighter rue, and 2) thick like molasses with a much heavier rue, take the soupier one. The food is so tasty but so heavily spiced that visitors need to take care and have a day off or intersperse with light and healthy (especially stomachs from overseas). This is the Sazerac and Hurricane capitol. Try a Sazerac (drink) to say you've done it. Hurricanes (drink=dangerous) are for those who want to get splashed unawares--potent and hangover. Try the turtle soup at the better restaurants if offered, it is delicious.

Chicken and waffles has been around for a long time in the South. It looked good though.The fair looked fun and the meat looked like rotisserie + flame? Looks as though everyone had a good time. Yams and Sweet Potatoes are subtlety different. Both root vegetables but are different in color texture and makeup.

@@you_can_call_me_T A curious thing happens in the islands of the South Pacific (Polynesia and Melanesia). There are four main starch plants: 1) Taro (brought originally from Southeast Asia by the islanders as part of their settlement); 2) breadfruit (brought from the Caribbean by British and French traders and whalers); 3) Yams (brought by Dutch traders); 4) Sweet potato (brought from South America by Spanish traders). There are also four colors: White, off-white, yellow-orange, and a light purple. But the same plant doesn't have the same color from island group to island group; the purple plant will be breadfruit in one island cluster, but taro in another cluster a few hundred kilometers away. If you find as a traveler that you like some plants and don't like others, the color isn't a clue as to which one you're about to eat - you have to ask which one is which on that island.

Marie, it's always fun seeing you go out and find southern foods. I can understand why a lot of French people would think that the food is too different and want him to alter it. The Waffle Burger sounds awesome and I've never had one, but now that I've seen it, I'll add it to my options! It made me laugh a little when you took a fork and knife to it. I fully expected you to pick the thing up with your hands and take a big bite out of it like a Velociraptor! 🤣 Southern cooking is slowly growing in Europe though, so hopefully it'll be more readily available to you. It's awesome seeing you out with your mom having fun and trying different things. I couldn't help but smile when she was laughing at you as you were trying to find your words. I can understand how difficult it must be switching between languages, especially more than two. I look forward to seeing you off on another adventure. Knowing you, it'll be someplace hot, as that's what you tend to gravitate to. Regardless, I hope you have an awesome day, and always keep smiling!

The sandwich didn't look too bad! I prefer my chicken and waffles spicy with lots of maple or breakfast syrup. The best I had was at French Toast off Decantur Street in New Orleans. I also like it from Metro Diner (Florida diner chain.) Bon appétit! :)

Hey 😋 Bon Appetite Marie & Mom , It looks like a popular hot spot , finger lickin good , anythings on the menu as long as there's some chicken. ,the size of those 🧇 crispy & sweet, it's creative whoever it was that included Burgers ( 1920's) & it's like there's no limit when it comes to toppings , whatever you fancy. Believe it or not fried chicken came to America from Scottish immigrants , black folks spiced it up alongside collard greens , south Carolina's state Vegetable. Soul food been passed down over many generations but the term was first coined in 62 by poet & civil rights activist Amiri Baraka , some after Sylvia restaurant opened up in Harlem. What I wanna know is how come they're wasn't any Gumbo 🥘 , kinda disappointing , you could both try cooking up your own ( without any secret recipe) if you get the Roux just right. It's gonna be amazing if you get invited to a Gumbo party in the big easy. Your hometown fair sizzling , they sure know how to put on a BBQ that would make even a Kenyan nomad 'nyama choma' ( there crusine been influenced by france) proud , that's a crazy amount of fries , it all looks so filling , your mom was enjoying those 🥯 ain't they also known as pancake balls ( Aebleskiver)& traditionally served at Christmas , it weird that it translate as Apple slices but doesn't have any. It been marvelous like always, with all those close ups I'm hungry now. Before I go I wanted to mention there's a few people recently like Andre from European reacts , I believe he's from Portugal & L3WG have been promoting your American videos . Wot about Austin brown leaving home free , will they continue without him , maybe bring somebody in new , he did a live stream all about last week. Nitpick, that BBQ looked more like grilling/rotisserie to me. For proper BBQ, it shouldn't be out in the air (and flames!) like that, but slow cooked in a smoker.

I'm 99% sure Waffle Burgers have existed for many years, although are very uncommon. I just know if seen mention of them somewhere before, from years ago. It does seem to me that at least standard waffles wouldn't hold up very well and would disintegrate quickly as the burger juices soaked in. You'd have to overcook the waffles deliberately.

Chicken & Waffles was a fad in the US about 5 years ago. You can still find Tennessee Hot Chicken (a newer fad) on waffles at IHOP.

Fad? Chicken and waffles started on the west coast decades ago and eventually made its way to the south, much more than 5 years ago. And it's still a popular menu item. Not a fad at all.

Marie, le problème avec le restaurant Gumbo Yaya c'est peut-être plus que tout est écrit en Anglais sur l'édifice et en partie dans le menu. Si il essayait d'ouvrir un restaurant identique ici au Québec, il ne l'aurait jamais ouvert, nous avons des lois pour préserver le Français et ça inclut les signes et écritos sur les édifices. Je ne veux pas être négatif, mais il faut s'adapter à l'environnement et la langue parlée dans celui-ci, c'est ce qu'on appelle le respect. Superbe vidéo ;)!

The menu was actually in both English and French. The dish names were in only English, but there's nothing odd about that. French restaurants in the states serve dishes with French names... Maybe having the writing on the building in only English wasn't the smartest choice, but the French aren't likely to be offended or as consciously protective of their French as people in Quebec. They own the language and have spoken it for over two thousand years. I guarantee you they don't feel threatened lol. French has only been in Canada for a few hundred years and French speaking areas are surrounded by English speaking areas. So it makes sense to guard it if you don't want it to slip away. But I doubt the French are worried about that lol.

I have French relatives who visited Miami Beach in the Winter when the place is (or used to be) full of French Canadians. They couldn't understand when they spoke. In fact the children covered their ears so they wouldn't hear their accents.😊

As an American it is amusing to see how it is marketed. "Soul food" is what black people in the North U.S. call Southern food. Their ancestors came from the South and of course cooked that food and somehow in the 1960's black people in Northern cities started calling it Soul Food. It is not called that by people who are from the South

I'm black and I live in the south.... The term soul food is definitely used. It's not a blanket term for southern food though. It refers to black southern cooking made in the style of our ancestors. There are some southern dishes that are generally considered home cooking (many of which were heavily influenced by black cooking). But for it to be soul food, it's gotta have that *thang* on it. There are restaurants down here that describe themselves as southern cooking, home cooking, comfort cooking, etc. But if you're gonna call it *soul food* there better be some black women in the kitchen with a little extra arm fat, preparing that food with love and seasoning lol
