Because it has then the consistency of a syrup and it‘s sweeter. When it‘s too watery it‘s more difficulte to work with it and you can add less sugar.

I really hope that this guy was slowing it down for the camera. If he wanted to make enough to make a profit, then he'd need to start at least 8 hours earlier. He's not even slicing them evenly when he's at that speed. I get that he's not Marco Pierre White. Thinly slicing a clove of garlic while looking into a camera claiming to be a home cook.
