When mint is in season, there’s nothing more I love to make than fresh garden mint iced tea!
INGREDIENTS
- 2 cups mint leaves, washed and picked off stems
- 4 cups water, separated (depending on strength desired)
- 2 green tea bags
- 1 lemon
- honey or sugar to taste (optional)
INSTRUCTIONS
- In a large measuring glass, pour 2 cups of boiling water over the prepared mint leaves and tea bags. Steep for 10-15 minutes. If leaves are steeped too long, the tea will become bitter.
- In a pitcher strain and discard leaves.
- Add 2 cups cold water, juice of one lemon, honey, and ice.

How much mint should I use if making without the green tea? I’ve made it with peppermint tea bags but I’ve never had much luck trying to use fresh, assuming because I haven’t used enough and I read something about tearing the leaves as well before steeping?

In the Netherlands drinking regular mint tea (usually with honey)is really popular, so much so that most restaurants have it and a lot of offices have mint in the fridge for just this purpose. We put it in with the stems though, they also have lots of flavour.

I like pairing my mint with lemon balm; just about any tea I make from our garden uses lemon balm as the base. Pennsylvania Dutch tea thyme and apple or grapefruit mint are also pretty nice accents. It’s also helpful to roll your herbs in your hand/fingers for a moment before steeping, always find mine steep better that way (and besides, your hands end up smelling great)

We make something similar sounding at Starbucks. It’s mint tea with steamed lemonade and honey blend. It’s called our honey citrus mint. I’m sure it’s not as good as yours, but for people who don’t want to make it I think it would be a decent alternative. Although it’s hot.

Why ruin good organic mint tea with commercial tea? Skip that part, muddle the mint before you add the water and you get a better flavor. If you add just the right amount of sweetness, it will taste like doublemint gum.
