Her having made her own cheese from fresh & most likely hormone free milk; her marinara probably started w fresh tomatoes & she probably used fresh gatlic fresh basil & Oregano etc.❤ So yes BETTER Homemade & from scratch is ALWAYS going to be "healthy"- ER; But deep fried food itself isn't healthy but rather something to enjoy in moderation a special treat❤. It's a "healthier" preservative & chemical free junk food treat option❤ ps this is coming from a health conscious lady who also caters as a side business; & aracini ( risotto creamy rice, balls w mozzarella in the middle, breaded & fried) is one of my absolute favorite guilty pleasures lol. It's sooo bad for my health BUT definitely better made homemade than some frozen storebought version

Can you tell what's the exact thing you're adding in milk?
@xxluggixx25595 ай бұрын
There are two options for coagulating the casein (the protein in cheese). Either with an enzyme called rennet (originally it comes from calf stomachs but nowadays it's more often extracted from plants or microorganisms) or with an acid like lemon juice or vinegar. For mozzarella it's traditional to use both. You can just buy the vegan rennet as a tablet and dissolve it in some vinegar.
@CarpeDiem-ww2fk4 ай бұрын
@@xxluggixx2559if we use vinegar, doesn't it turn out sour? How is the measurement?
@xxluggixx25594 ай бұрын
@@CarpeDiem-ww2fk I don't know the exact measurements but you don't need very much. Something like a 3% vinegar to milk ratio is definitely enough. If you also use rennet you need even less vinegar. And the majority of the vinegar will be left behind in the whey anyways. Some of it will stay in the cheese but not enough to make it taste sour, it contributes to the flavor by giving it a slight freshness. The pH of mozzarella is around 5 which is equal to that of coffee or beef.
