Fried eggplant curry | वांग्याच भरीत एका वेगळ्या पद्धतीने | Brinjal curry | masala eggplant | Bharli vangi
Ingredients:
10-12 small eggplant/vangi/brinjals
cooking oil as needed
1 big onion chopped
1/2 tsp turmeric (haldi) powder
1 tsp salt
1/2 tsp asafoetida (hinga) powder
1/2 tsp garam masala
1 tsp kashmiri red chili powder
1/2 tsp mustard (rai) seeds
1/2 tsp cumin (jeera) seeds
Curry masala:-
1 cup dry grated coconut
1/4 cup peanuts
1 Tbsp white sesame seeds
1/2 inch ginger
3-4 garlic cloves as per their size
