Fried veggies with tomato sauce
Ingredients
four eggplants
One courgette
Two red Marconi peppers
two green Marconi peppers
six tomatoes
four cloves of garlic
Salt
Black pepper
olive oil
Preparation
We peel the eggplants as striped, cut them into tiny squares and put them in a tray with greaseproof paper. in the same way, cut the courgette and peppers, pour salt, pepper, olive oil, mix well, and bake in a preheated 240-degree oven for an average of 30 minutes. however, you should still check the cooking process because each oven's cooking time may be different.
After chopping the garlic and tomatoes finely, we cook them well on the stove with olive oil until the consistency thickens. take out the vegetables from the oven and put them on the serving plate. then pour the sauce on it, serve it with whipped yoghurt, it is a very light and delicious dish.
