How does one arrange an orchestra version? I'm too old school to know any tech or software behind virtual instruments and recording that you and Evan Call use lol.

I use Logic Pro as Digital Audio Workstation. I then arrange midi files from sound sources libraries to make the orchestral music. I believe Evan Call and many composers do the same thing or even record the track with a real-life orchestra
