Cause to use the Force takes attention, and you are fighting speed enhanced semi-psychic warriors with spidey senses. It helps to not overload your brain with too many tasks in such a scenario. This is why you don't usually see Jedi trying things like pushes/pulls in lightsaber fights. You try to focus to do the push or pull for the couple of seconds and they take your arm off in that time. In the lore of the battle of Geonosis the Jedi that focused on the form that uses a lot of Force moves in their lightsaber style all died. The other problem I see with this, is if you Force levitate your blade at them and they "catch" it and slow or stop it near them they will just cut your lightsaber in half.

Just a short info about "why did they hold the lightsaber" Ther is a trchnique to let your saber float and fight with it without touching, but it is considered extremely difficult and dangerous for the user. If i remember correctly, only yoda was capable of doing this, regarding the jedi council we all know. There was an old republic sith, who specialized in this technique, and was able to use 3 sabers at once (darth traya), but yeah, even she was defeated. Hope this helps ✌️

That's sad because the NPC fights are so freaking easy, there are star wars game that you can do the canonic duels like Windu vs Palpatine, that's not easy as this.
