@@matthias7569u definitely don’t watch food ranger or other food vloggers I.e Mark Wiens etc). Most of these guys are living in Asia or travel to Asia 6/10 times. Western countries have limited stuff to talk about, whereas in Asia, there are Vietnam, China, Thailand etc… they all have their own unique style. Dude, you really need to see the world!

Because in China there are many different types of cuisine other than 八大菜系 there's also different regional variations and ethnic cuisines whereas in smaller Asian countries there is some regional variety but otherwise its pretty much the same type of food thereafter. NW China food is definitely very different from the southeast which is the type of food I grew up with (Fujian-Guangdong) here in Southeast Asia, a lot more lamb, beef, chilli and grilling whereas we have more seafood, pork and steaming

Such a pleasure joining you in your food adventures! Thank you for bringing us along. Suggestion: when you hold the food up to the camera with you hands, keep the food still for 3-4 seconds. It takes a couple of seconds for viewers eyes to adjust at all, then to examine. Difficult when it's moving around.

My hometown is LanZhou. I used to have a whole bbq pita with bbq lamb in it every time after late night painting class. With the snow all around, that hot pita is definitely the world’s most delicious food~~~

Enjoy watching this so entertaining video! Yes many dishes along the silk road have similar tastes. I believe 浆水 (No. 7 and 11 of the list) is something most difficult to find in other regions of China. But it is a little bit like 豆汁, which many people cannot stand at the beginning. You may give it a try in Tianshui as well haha!

甜胚子 is malted oats, in a similar vein to 酒酿 malted rice, but more often written as sweet fermented rice. it's actually pre-fermentation where the grain's carbs are malted into simple sugars, and not yet fermented (sugar -> alcohol)

When I lived in Brooklyn NY (back in the olden era of the 70s to the 90s lol) I had the pleasure of having authentic Chinese spots fairly close to me. One place I used to love going to specialized in Cantonese cuisine, and especially noodle dishes. That one location I discovered created my lifelong love of Chow Fun/Mei Fun/etc. dishes. The first noodle fish you had in this video looked very similar to a noodle dish I used to have from a sister restaurant located right next door to the Cantonese spot - and let me tell you, that "dry" spiced noodle stuff is incredible. Back then I wasn't a chili head or into spicy stuff much, so it blew my face off the first few times, but a giant bowl of noodles (with pork and some of the best bean sprouts I think I've ever had lol) and a drink for $5 was amazing for a college kid like me. Mind you, coming out the other end wasn't always fun, but you know, you do what you got to do sometimes for good food :D So yeah, thanks for this one, that first dish, brought back so many memories of my experiences eating at legit authentic locations (and the two times I went to China in my life, obviously) and now I miss them so much. I don't think I've found a single authentic restaurant down here in Florida where I am in over 30 years - which sucks :(

Thank you for highlighting food adventures in China.... I visited for 3 weeks from Canada and most people in my life questioned why I would visit China at all....China definitely has a bad reputation, but it is mainly based on western propoganda. Everyone was so kind to me, and I felt very safe as a solo female. I had the best 3 weeks travelling there, and the food was amazing! Wish more people would give China a chance!

I wonder if some areas have milder chili varieties. I mean there was just so much flakes packed into that bbqed bun. When I was in Bhutan there would often be dishes were the chilies seemed less, but the varieties were so dang spicy that it was like eating a whole bowl of chili flakes. Bhutanese food often pairs cheese with chilis even, but no amount of cheese sauce can save you from their Scoville level!

Slik road closed off during the ming dynasty and chili peppers first arrived in China in the late 16th century. The slik road may have helped but not the way people thought.

Moorish are things related to the Moors (Middle English/Medieval before Shakespeare term for Mediterranean muslims, Iberian/North African). Moreish is a British slang for something that makes you want more, therefore more-ish.

My cousin Wang Suk Kok owns a Chinese restaurant called Suk Wang Meat House. He said he had to use gutter oil and increase meat size by blending in dead insects and saw dust. His customers commented on the great flavour of the meat paste. But lately his business decreased and he feels anxiety.

If you haven't left there yet and don't mind a bit of trouble, you can visit a small place near Lanzhou called Longxi. I'm from there, but I now live in Canada. There are two kinds of noodles called Dandan noodles and hulumian. I'm sorry I don't know how to write those characters. There are also many delicious halal barbecues. Thank you for coming to the barren northwest of China, where you will find the most simple and sincere people

Zha-Jiang_Mien (Fried Bean Sauce Noodles) is a common dish in northern China and every province has its special variety. Amy, I got a KZfaq channel there is a video of my dad making that sauce. Maybe you can make some of your own. Cheers mate.

Actually chilli came to China from the sea, that's why Sichuan people call it 海椒 sea peppers. I guess the reason why Gansu and Shaanxi have the similar chilli is because of the convenience of the transportation and similar weather. You can see not only the chilli is similar, also the accent, plants, and a lot of customs are similar as well.
