Another home run as always Mike! The big game is on Sunday and I’ll be making rib tips and smoked queso out on the kettle. Since I only have one kettle and will be using the Sns for both dishes I’m not sure I can cook them at the same time. If I can’t should I make the queso or rib tips first on the grill? I'm maken this tomorrow. I've made it before but I love to see other twists. Ill do my own twists but never thought of cilantro during the cook! Does it last the smoke or is it better As a garnish? BEARS packers game 1 tomorrow. I'm soooo happy you doing it on a Weber. Hate pellet crock pot cooks!! Got my follow!!

Yes, the Cilantro will add a lot to the end result by being in during the cook. You can always save some for garnish if you like. -Mike

What can you use instead of mild melting cheddar?! and pepper jack/monterey jack? European here. Used mild white cheddar block and edam to substitute. Looked great but didn't achieve the same melting.

You certainly can, I just went the “trendy” way by keeping them separate for the first portion of the cook. It works fine either way 👍🏼

You can omit the velveeta altogether if you want. It adds a bit of creaminess but you can also achieve that with a little bit of milk after you mix it and then mix again right away. Or you can not do either. Still turns out great! -Mike

I kept it and used it to pour over the top of the meat (which keeps it from drying out as stated in the video) but you can adjust to your preference. The recipe can handle it either way 👍🏼
