Gavhachi kheer is a wheat based sweet dish that has traditional roots and is a sumptuous, delicious recipe that can be made all year round!
This kheer can be stored in the fridge for 4-5days, it soaks the milk quickly so if you consume it later, add a little milk to it as to loosen up the kheer !
Ingredients:
1 cup wheat, soaked in water a night before and strained.
1 cup jaggery
A pinch of nutmeg
7-8 Cashews broken into pieces
4-5 crushed Cardamoms
1 1/2 cup Coconut milk
1 cup Milk
Pinch of Salt
Method :
1. Sprinkle a pinch of salt over the wheat
2. Cover a mortar with a cotton/muslin cloth, add small batches of the wheat, cover the wheat and gently crush as to loosen the skin of the grain.
3. Then grind the wheat coarsely in a mixer and add 1 cup water to the mix.
4. Add 1/2 - 2 cups water to a pressure cooker and cook the ground wheat for 8-10 whistles.
5. As the cooked wheat cools, to a pan add 1 1/2 cup coconut milk and 1 cup jaggery and mix well till the jaggery melts.
6. Add the cooked wheat and mix well on a low flame.
7. Add 1 cup milk and mix in.
8. Once the mixture starts to form bubbles add pieces of cashew, crushed cardamom, a pinch of nutmeg and pinch of salt.
9. Kheer is ready!
