This is the method that I use to wax most of my hard cheese that I make at home. You can get the special cheese wax at most good cheese making suppliers, and it can be reused many times over. Just wash, dry and remelt it in your pot!

Yes, you need to air dry the cheese until it is touch dry before waxing the cheese.

I keep my cheese wax in a crock pot so I can just plug in and it melts at the perfect temp. When you're done, just keep the lid on. It's great!

Thank you!! My first cheddar cheese molded at day 2.. I’m a little unsure what to do. I’m trying to learn. I talked with a local homesteader friend and she suggested I clean it off with a salted cheese cloth then soak in salt brine. I’m going to allow that to dry then wax. First time at cheddar and I am a little disappointed it molded during the drying time

Can you use Beeswax to coat cheese? I've read that you can use that because it's tougher and more flexible. I want to try this and already have beeswax lying around.

I am not sure what went wrong in your case. It would be easy to remedy. Just remove the way, dry it again and re-wax. It will be fine.

do you turn the cheddar 90 degrees after every 2nd dip to ensure there are no gaps?

Waxing is for maturing the cheese, not for long term storage. When mature, you need to move the cheese to normal refrigeration to slow the aging process.

Do you run into trouble with the cheese "weeping" moisture or oil through the wax? I heard a cheese needed to be dried out before you could wax it, or it could weep through the wax

I am curious is there something special about cheese making wax. Or can bee wax , paraffin wax , palm wax ,...etc be used to wax cheese. If the ingredients are just wax does it matter what type it comes from. I imagine bees wax is the most natural wax and coloring bee wax should work right? Anyway looking into it not going to wax cheese for quite sometime but like to be ready when i do and not have any toxic wax that isnt food grade. Also do you ever wax in paper on top for describing the cheese / date of making etc. And for aging the cheese all i got is 30 to possible 45/48 deg issue temps is a refrigerator ok for aging most cheeses ???

What are good alternatives to wax and vacuum sealing? Because we just made Gouda, still have to brine it, and we have neither wax nor a food vacuum sealer.

New to me whilst searching is a cheese coating that you brush on, from Cheese and Yogurt Making. Brush and let dry. Do you have any experience with this stuff?

g'day gav i waxed my cheese it looked good the next day i went to look at it and a air pocket has popped up should i pop it n reseal or leave it. Also mate is it white vinegar you clean with neat or 9 parts water 1 part vinegar thanks for your time mate

After air drying do you have to dip in vinegar and set to dry again before waxing

I let my 1lb blocks of cheese (10 of them) dry out for 3 days until they had a rind hard enough to start cracking. I waxed them with no problems. Several weeks later, however, they developed tiny beads of oily sweat on them. I wouldn't really call it "weeping" since it there was no pooling in my container. 4 Questions: Did it need to dry even longer?!! If so, will the hard parts rehydrate themselves once waxed or will all that part be wasted? Do I need to peel, dry more & rewax? Please help!

Is it possible to make your own cheese wax. I've searched and found a few ideas using oils, beeswAx and paraffin.

Sure, give it a go. Just make sure it is pliable once its firm. Let me know your results.

Do u do this after the cheese is matured?? Or can u do it before and let it mature with the wax on? And how long does the cheese stay good for

Before maturing as it is the wax that prevents moisture loss during ageing.

Gavin Webber so once the cheese is made and shaped And all that then u can wax it?? So if I made cheddar .. Once its done wax it and put it in a fridge and wait however long it takes for the cheddar.. And then when its matured or ready to be eaten just cut into it and enjoy??

Actually, this method of waxing can allow you to store the cheese for up to 25 years. Yes, 25 years. Google it.

Due the wax, dye the cheese. It doesn’t need a colour, it’s the cheese that matters

Yes, you can cloth band cheddar. Here is a quick demo here; kzfaq.info/get/bejne/iZx3hJODtdfIl30.html I used coconut oil, but in future, I would use lard or butter.

Old post, but..you can use olive oil as well. You might need to repeat the oiling a couple times, and monitor for mold..

g'day Gav 3 months later iv opened my cheese 'It soft white and creamy and has the taste and smell of a blu cheese defiantly not a cheddar ,i think i forgot the cheddaring stage also i stored it in the normal fridge at about 3 degrees c,I called it my stinky pom cheese ,4 brain operations i forget my own name sometimes,was it the cheddaring stage or the temperature that gave this unexpected result ?

Rob Tomkins Hi Rob, could be that not enough whey was expelled and there was too much acid development before pressing. Also you may get that result if you matured it at too low a temp. Give it another go, because all cheese is a learning opportunity.

Gavin! My farmhouse cheddar has mold under the wax! It is quite depressing. I tried so hard to keep that from happening but, it seems, to no avail. What is to be done now? Sad in USA

+Barbara Rickman Hi Barbara. Here is a suggestion. Remove the wax, then wipe the entire rind down with a cloth soaked (then wrung out) in white vinegar to remove the mould. Then wipe with a cloth moistened with a brine solution. Either wax again making sure there are no holes, or vacuum pack if you have the facility.

What would the consequences be if the wax were above the recommended temperature?

Besides catching on fire, it could scorch the surface of the cheese and melt it.

So if it were a margin of about five degrees, would I be relatively safe? I use a double boiler to melt the wax, so it could never go any higher than one hundred.
