Leisure Cooking at Home with Barry!

This very popular seafood platter has it's origins in the Low Country of the Southeastern United States. You'll find different versions from South Carolina, to Georgia, even as far as Louisiana! This is my version and I hope you'll enjoy it!

I see a few steps that I missed when I tried to do a crab boil this past Christmas. I am going to follow your instructions…I still have some snow crab legs in the freezer. Thanks for being a great teacher.

Interesting. I’ve done a fair number of Low Country Boils. I’ve never used all the extra spices you did but I use 10x the crab boil seasoning. I like the garlic butter sauce - how would you do that in bulk? Last weekend, we did a Boil with 50 lbs each of potatoes, corn, sausage, and shrimp.

Hey Don! Thanks so much for checking out the video and for your question...which, by the way, is a really GREAT question! WOW! 50lbs.! I haven't cooked THAT much before, but If I were to do so, I'd try to use a large, deep aluminum pan (similar to the pan I used in the video), or a turkey roasting pan with some of the garlic butter sauce in the pan to toss the smaller items (shrimp, corn, sausage, potatoes, etc.) Now, for the Snow Crab clusters (after tossing the smaller items), maybe use 2 large aluminum pans. One with sauce, and one with the Snow Crab clusters. It may be cumbersome, but I'd pour the sauce from the one pan over the crab cluster in the 2nd pan, then transfer the crabs to the first pan (arranging them so the non-coated sides are exposed), then repeat the process until they are coated to your desire tastes. Again, this is just a suggestion as I've never cooked that much seafood at one time! Please come back and let me know how it turns out if you're able to try it...or if you come up with a different method, please share that with us here as well. There's always more than one way to accomplish a given task! :^ ) Thanks again for your comments and questions. I'm very appreciative! Barry

Hi @garyschmid9607 ! Thank you so much for reaching out and please accept my apologies for not responding sooner! The ratio for the ingredients for the actual crab boil really depends on the size of the pot you're using. In my video, I used a pretty large boiling pot, so I used about a 1/4 cup for each spice...except for your salt. Now...having said that, the most important ingredients are going to be your SALT and the CRAB BOIL CONCENTRATE. Always add your salt first and add a little at a time until you've reached your desired taste. (if you add too much salt, just add more water or pour some out the pot, then add more water to thin the salt content). THEN add all your other seasonings (...this way, if you have to adjust your initial salt content, you don't waste all the other seasonings)! When adding the Crab Boil Concentrate, be VERY careful as to how much of this you use. It is VERY STRONG and too much could ruin your boil! For the butter sauce, again, it depends on how much you're cooking. I would start with a teaspoon...taste the butter mixture, then add more if needed. Here again, the amount of seasonings you add should be proportionate to the amount of melted butter you're using. Start small...it's always easier to add more seasonings, then it is to try to take out after the fact! :^ ) So...to your original question, the larger the pot, the more the salt/seasonings; the smaller the pot, less seasonings. Same for the butter sauce...the more butter, add just a bit more seasonings. I hope this helps. Please message me if you have any other questions and I'd love to hear how things turn out for you!

The sausage I used was actually: Brand: Farmer John's Type: Louisiana Style Hot Smoked Sausage Where Purchased: Costco For the seafood boil seasoning, you should be able to find it in your local grocer's Seafood Dept. Well, sir...what you see as me "doing too much," may be viewed as "not doing enough" to the next person! But I am VERY appreciative of your comments and perspective. I was born and raised in Georgia and I'm VERY familiar with and LOVE B.B. King, in fact I've even played on stage with his son. But I also like Muddy Waters, Howlin' Wolf, Robert Johnson, and John Lee Hooker. Having said that, I'm also appreciative of the fact that we've all been blessed with "Freedom of Choice!" So on the days I'm not in the mood for Blues, I may listen to Jazz, or Funk, or Rock...I even love listening to Zydeco! But what I don't do is judge those who don't like what I like or who don't listen to what I listen to. Instead, I take the opportunity to appreciate their differences and learn something new from them in the process! Thank you again, sir...for sharing your thoughts...yet another opportunity for me to learn from someone else!

Thanks so much for your comments! Yes, you are correct...at that point in the video, they were cooked through about ¾ of the way, but because the shrimp cook so quickly (2 to 3 minutes) they were perfect by the time I was ready for the sauce! 😀👍🏽 Thanks again for your comments! 😊

Hello @LesyaPerry and thank you so much for your question. The stock pot I used is one I've had for years, so I don't remember the exact capacity, but I recently purchased a different stock pot, and based on the capacity of the new pot, would say the pot I used was approximately 20qrts. Of course, your pot doesn't have to be that big, but that was the approximate size I used. Good question, my friend! All of the seasonings I put in the pot was to flavor all the ingredients during the cooking process. I did keep some of the flavored boil liquid in the pot if I had leftovers to store (that hadn't been seasoned with the Garlic-Butter sauce) but otherwise, I didn't use any of it after everything was cooked and seasoned with the Garlic-Butter sauce. Hello, @BSmith51 and thank you for your question. The short answer to your question is yes. I've cooked and grilled lobster before, but I haven't specifically put them in my boils...just as a personal choice. But you can totally add lobster tails to your boil. When (or if you do), here are a few things to consider: - Space: Depending on the size of the lobster tails and the size of the pot you're using, the tails (along with all the other ingredients) may take up a lot of space. If the lobsters are smaller (like 4-6 oz.), you could cut them in half, lengthwise, from the tailfin to the front. If they're larger, you could cut them in chunks crossways. This could save you space, and it will make the meat more accessible after cooking. - I would add the tails just before the shrimp (about 3-5 minutes prior). If you've cut them as outlined above, then (like the shrimp) the lobster "peices" shouldn't take long to cook. The shell should be a dark orangish-red. - As with the shrimp, you'll want to add them near the end of the cooking/boiling process, but you want the seafood FULLY COOKED, but not "overcooked." Otherwise, your shrimp (and/or lobster) will have a tough, rubbery texture. I hope this helps answer your question, and if you use the lobster tails, come back and let us know how it went! I'm sure you'll enjoy adding the lobster pieces to your Low Country Boil! 😃👍🏽
