2-3 baten bhot important h ek toh chhena acche se dry hona chahiye aur fir use 8-10 minutes k liye smooth karna h Yadi chhena acche se dry nhi hoga toh properly smooth bhi nhi ho payega aur cooking k liye bada bartan le, chasni k lie pani ki quantity sugar se 2.5 guna rakhe aur ek pro tip Banne k baad ek bartan me ice aur pani le aur rasgulle us me dal de bina chasni k aur jb chasni thandi ho jaye tab rasgulle se pani nichod k vapas se chasni me dal de usse rasgulle ki shape and size change nhi hoga our vo hard bhi nhi honge

Mam if we use khoya instead of maida....then and any change will occur.....?

Don't add maida next time but you have to smoothen the chhena very well otherwise it will crack Somtimes overlooking of Maida makes the rasgullas hard
