Dalmatian recepie for Crni rizoto . Black rizoto ! Mince onions and sautee in olive oil . On a medium heat . Add squid ( without the ink ) Add garlic and parsley . Sautee . When the squid is medium tender add rice Add warm water , and squid ink . Now there is a sinch to adding the water , it depends on the type of the rice and quantity . Then add salt . ( NOT before , because salt hardens the flesh of the squid ) Just before it is finished , add just a little bit more of diluted ink in water ! Serve with red vine .

For future reference. Just hit the pasta with the squid ink. Leave everything else normal. It's even better if you make the pasta from scratch and incorporate the squid ink into the pasta. Then plate the pasta and top with the colorful ingredients. Looks way more appetizing. Beautiful actually. $.02 (my two cents - bit of information)

To stop pasta from sticking together - move it around for like 10-15 seconds after dropping it into the water. If you put in a lot at a time - push it in and swirl it around until it softens, so the ends don't stick together.

Squid ink pasta is considered to be a real delicacy around the fishing villages of Messina Sicily and I'm sure many other places around the world. This episode brought back some of wonderful childhood memories of my dear late mother carefully cleaning the squid and removing the ink sack to make the pasta sauce. The flavour was unique but amazing. I also remember the hilarious digestive horror of going to the toilet afterwards. 😂😂😂
