RECIPE:
Molasses Ginger Spritz
1 1/2 cups (3 sticks) butter, softened (not melted)
½ cup sugar
3 Tablespoons honey
2 Tablespoons plus 1 tsp molasses
1 ½ Tablespoons vanilla
1 egg
3 ¾ cups flour
¼ teaspoon salt
¾ teaspoon baking powder
1 ½ teaspoons cinnamon
1/2 teaspoon cloves
2 teaspoons ginger
Preheat oven to 400°F. Cream the butter very well with an electric mixer on its highest setting. Add the sugar and cream it very well again. Add the honey, molasses, then vanilla and egg; beat well until light and fluffy. Meanwhile, in a separate bowl, combine the flour, cinnamon, cloves, ginger, baking powder and salt. Add it slowly to the butter mixture, just until the flour is mixed in. DO NOT over-mix! Spritz dough should be soft but not sticky.
Bake for 6 to 10 minutes until the edges begin to brown. Check early and often as spritz brown quickly. Let sit for 3 or 4 minutes before removing to cooling rack. Makes about 110 cookies.
DECORATING: Use any decorating-consistency icing of your choice, such as royal icing. I used store-bought icing and the #1 and #2 round tips. Decorate as you like!

Those are adorable! Thanks for this video bc I specifically wanted to know if gingerbread cookies were possible in the cookie press. No more rolling and cutting for me! :)

Thanks very much for your video! I love that your recipe is Spritz cookies🤗 Your decorating ideas too are superb. As I'm from Europe, I can only assume that I can't purchase your press and disks - what a shame! As a matter of fact, I bought a new press last weekend, and though it's a German brand, it only has 8 disks - just imagine 😏 Do you sell yours on Amazon?

Womdering if this recipe works for high altitude? Also could I swap out almond flour for regular? J live here in Boulder, CO-mile high!

it absolutely works at high altitude. Cakes and such are far more affected by altitude than cookies, generally. And I have family in Florida who test these at sea level to be sure they work there as well. I recorded these videos in Colorado Springs, so yes, high altitude is fine ;). I have no idea about almond flour, I've never tried it in cookies. Maybe post back here if you try it! Happy Baking! ~ Susie the Disk Deisgner

I am allergic to honey can I add more molasses instead?

Hi! I'm thinking your best option would be to replace the honey with 2 tablespoons of sugar (honey is sweeter than sugar so 3 tablespoons might be overkill). And I think 3 tablespoons of molasses would probably be over the top. If your dough is stiff from replacing the honey, just add a little vanilla or even water, a teaspoon at a time until the dough becomes workable and has the right texture.
