@@Blu3Flam1ng0 I believe it's equal parts soy sauce to mirin (a type of rice wine) Usually its found next to the soy sauces in the grocery store, I got the kikkoman version in a yellow bottle 😄 Hope that helps 😀

I recommend next time you microwave for less, which should prevent it from becoming rubbery. Try 15 second intervals, and knead the dough between each one.

3:19 some microwaves actually targets the areas that are already the warmest and heat those areas even more, so that might explain the ice cube not having melted much

the ice didnt melt in the microwave because the water molecules are all locked together in a crystal structure by hydrogen bonds. These bonds will stop the water molecules rotating, which means they can't absorb much energy from the microwaves. This, in turn, means that the ice doesn't heat up.
