In this episode, So Han explores some of the oolongs from Anxi county in Fujian province in South Eastern China. These teas showcase a wide variety of oxidation and though traditionally charcoal roasted at a higher-oxidation, a newer low-oxidation form of processing has been dominating in popularity in the region. So Han showcases both of these styles with Tie Guan Yin and also demos Golden Turtle (one of the Color Types) and a bonus tea (Zhang Ping Shui Xian) from a town adjacent to Anxi County. Stories of sourcing and legendary origin! Hope y'all enjoy!

Delightful! I especially loved the story of your search for the best tieguanyin - had me laughing about the man from the factory! Brewed along with some Dong Ding and a red bean cake. I tried the hui wei bei with some Li Shan the other day, it was interesting. The saved cup tasted similar to if I had just cold brewed it. I look forward to that Taiwanese Oolong episode!

Lovely video So Han, as always. I am watching in parts (time not on my side) - first part with hand rolled unroasted Tie Guan Yin and second part with traditional charcoal roasted Tie Guan Yin

Tnx4vid, rly love'em! for a long time I couldn't become friends with the Tie Guan Yin taste... but today I adore it (mostly Formosa from small lots). Some charcoal roastings I find a bit heavy (but my taste for tea is constantly evolving).

We have a fairly good tie guan yin although it took us over two years to find one we liked. The more popular the more standardised they seem to become. Great video So Han ✌🏻

I think another great way to describe the se zhong are the Maroon 5. Everyone knows the singer (TGY) but not the other band members.

Have you noticed that tea tastes much better if you don't use a Gong Dao Bei (justice cup)? Just go straight into the cup! Experiment for yourself!

I haven't noticed that. Have you?? The Chao Zhou style of Gong Fu Cha often does not employ a gongdao bei but instead pours directly into 3 cups!

what you're talking about in terms of 鐵觀音 becoming so popular other varietals are being used to make it, reminds me of 大紅袍, really true dahongpao is super hard to find, if you can find it at all, but other varietals are being grown and blended and sold as dhp because of the name, even tho its probably 水仙 or 肉桂。。。and you immediately make that very same point as i started typing this 哈哈哈😂

Thinking a better version of Earl gray or Irish breakfast or the twinings offerings? I’m sure you have them in your videos but I’m still making my way through.

@@caseyjonesbklyn5796 so all of those that you listed would be considered Red Tea in China! Some good ones I would suggest from our shop: Crimson Spring and Black Phoenix are super nice but kinda spendy. River Red and Rum Raisin are the more affordable versions of those first two. Yi Ya Yi Ye Guizhou Red is really good. And honestly all of the red tea we have made from Pu'er plants are really good - Nannuo Sun Dried Red, Ultraviolet, Gamma Ray, Gu Shu Hong Might also suggest, outside the red tea category, some dark Shu Pu'er. Right now I think we have a Bing called Gold Tooth that's pretty good. Soon we'll have this year's new Rain Butter.

I wish it were easier for me to find the legitimate versions of these teas. I’d love to try both the oxidized tie guan yin and the golden turtle, but it’s so difficult to find them.

2:58~ 6:47~ I believe the characters are 龍頭鳳尾鐵觀音(鉄観音 in Japanese writing). Please correct me if I’m wrong. 29:13~ _Guān Yīn_ will definitely be disappointed with this news. BTW in the Japanese market, Golden Turtle _Huáng Jīn Guī_ (黃金龜), as Golden Osmanthus _Huáng Jīn Guì_ (黃金桂), is also well known, though not as well as _Tiě Guān Yīn_ (鐵觀音/铁观音). The other _sē zhǒng_ (色種) are usually blended with low quality _Wǔyí Shuǐ Xiāns_ (武夷水仙) to make cheap, bottled oolong tea (mainly to adjust the taste), which makes the 30:02~ double shame into a triple/quadruple shame.

Most of the ones we have at the Teahouse are either Bonavita or Elementi kettles. Both avail on Amazon.

I heard of people habing issues with the base plate after a year or so. Do you have recognized any issues? Btw I love all of your videos and watch them a lot during my solo sessions. Keep up the great work!

Usually So Han rinses every tea. Not sure why he didn't rinse this one. I don't always rinse tea - and low-oxidation TGY is one I often won't rinse. I don't find TGY gets sour with further steepings! Wonder what's up!

qhodave You should give TGY a rinse. Only teas I don’t rinse are most greens. Wulong and pu’er should always be rinsed. White and black should be rinsed if in doubt or if they’re bud heavy, many people just rinse all black and white anyway. Nearly all greens shouldn’t be rinsed if they’re high quality, it will ruin too much of the aromatics most greens are known for. As for sourness, I’ve never noticed that with the ones I’ve tried.

I've heard the low oxidation tieguanyin was more of a response to Chinese consumers craving the Taiwanese style low oxidation oolong flavor profile, so the dark charcoal roasted traditional became less and less popular in China. Ate there many traditional low oxidation Oolongs in China(that aren't influenced by the Taiwan Jade oolong processing) other than that zhangping shuixian you mentioned?

Yes there are! The Snow Teas (winter harvested) teas of the Phoenix Mountains are usually roasted and oxidized less than the more robust spring harvested leaves. But you are correct in saying that the low oxidation Anxi Oolongs were popularized in mainland China in large part because of their popularity in Taiwan.

I have heard that clay tea pots are not so good for chineese or japanese green tea ? Would you have a different opinion ?

I have heard this opinion as well, and mostly it comes down to heat retention. Teapots retain heat very well, and many think that because green teas often want cooler water that this is counter intuitive, but I think there are definitely ways to make green tea really well in a pot and if you find a pot that feels like a green tea pot, I say go for it!

26:48~ I've searched for Golden Turtle _Huáng Jīn Guī_ 黃金龜, but I couldn't find it. However, I did find Golden Osmanthus _Huáng Jīn Guì_ 黃金桂. Could you please tell me how they're different?

My understanding is that they are not different - folks in the region just started referring to this tea as Golden Osmanthus recently. Not sure of why the switch, but have heard this is the case. We still call it Golden Turtle for now.

So I ordered a clay teapot. Should I only brew one type of tea in it? If I do,idk if I would keep it for just oolong,or for puer.

You only need to dedicate it to one type of tea if it's unglazed. If it's glazed - go nuts, since it won't yang. If you go with oolong, I may suggest getting a little more specific, like I might not do the roasted Tie Guan Yin in the same pot as the Jade (lighter oxidation) Oolongs, since they're such different flavors.

It's either a bonavita or elementi kettle. Something easily available on Amazon. This one doesn't have a temperature gauge on it - just shuts off at boiling. The important part is the tetsubin or gooseneck spout, which gives an accurate pour.
