I think that's what makes him one of the best chefs in the world. It doesn't matter how much knowledge or experience you have, if you don't love your ingredients raw,prepped and ready to serve then the people eating your food can taste it. Gordon once said Food is a labor of Love and he's 1000% right

It's not worth using the parts of the skin attached to vein, since they add a bad flavour. My family used to hate bellpepper, until I started discarded the veins with a bit of the bellpepper skin still attached.

Not mentioned in this video, but Turkish sucuk is incredible. At least, if you like garlic and strong flavours. One of my personal favourites. Very easy to prepare too. Just slice it and fry in a skillet. It's great on its own, even better in a traditional sandwich. Grill some solid cheese (sheep's cheese is traditional, but a good sharp cheddar is great) alongside the sucuk, load on a toasted sesame roll, add some sliced raw tomato and top off with pickled chillies and pickled cucumber. It's comfort food and it's great.

I know the secret to success is persistence for perfection! As a chef you are the personification of persistence and Perfection! Now on another note please consider this post i will leave after watching all your cooking videos. Gordon your an amazing Chef and i loved when you judged the Guinness book of records for the fastest slices and Chef Hiro Terada won and did it blindfolded!!! I don't know if you've seen Chef Terada's trip he went on with Robert Arrington from KZfaq Channels " Deer Meat for Dinner " they did a catch clean and cook together. I would love to see Rob take you on either a gator hunt or a wild boar hunt and the two of you do a catch clean and cook together! I've going to tell you all now. Chorizo is pronounced Choritho in Spain. It's pronounced Chorizo in Mexico and everywhere else cos we include the Z. But if you want to use the spanish name then the Z is a 'th' sound.

Have you also tried the portuguese chouriços? It goes from the red to wine to the most unique such as farinheira and alheiras. Not only unique in flavours but also in history. Might be worth having a look Gordon.
