INGREDIENTS
Cacciatore
2 tablespoons olive oil, plus more for drizzling
1 pound skin-on, chicken thighs
Kosher salt
Freshly ground black pepper
1 small yellow onion, diced
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
4 ounces whole white button mushrooms
4 ounces whole cherry tomatoes
2 tablespoons unsalted butter
½ teaspoon red chile flake
1 tablespoon tomato paste
4 ounces pitted green olives
2 tablespoons capers
¼ cup red wine
1 15-ounce can crushed tomatoes
1 tablespoon balsamic vinegar
Polenta
4 cups chicken stock
1 cup polenta
Kosher salt
Olive oil
4 ounces parmesan cheese, plus more for garnish
Freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
Grilled Broccolini
8 ounces broccolini
2 tablespoons olive oil
Kosher salt
Freshly ground black pepper
Red chile flake
2 tablespoons balsamic vinegar
PROCEDURE
1. Make the cacciatore: Preheat your oven to 325℉. Place a large skillet over medium heat.
2. Add the olive oil to the pan and season the chicken with salt and pepper. Place the chicken in the pan, skin-side down and cook until the skin is crispy and golden brown, about 4 minutes. Flip the chicken and continue cooking until browned on the other side. Remove the chicken from the pan and set aside.
3. Place the onions in the reserved fat in the skillet and cook until they begin to caramelize, about 3 minutes. Add the rosemary and thyme and cook until fragrant, about 1 minute. Add the mushrooms and cherry tomatoes and continue cooking until the tomatoes begin to blister, about 5 minutes. Add the butter and chile flakes and cook until the butter has melted completely. Add the tomato paste and stir to coat the vegetables. Let the tomato paste cook until it begins to caramelize, about 2 minutes. Add the olives, capers and red wine. Cook until the wine has reduced by half, then add the tomatoes and balsamic vinegar. Place the chicken thighs back into the pan and place in the oven until the chicken has reached an internal temperature of 165℉, about 15 minutes.
4. Make the polenta: Place the chicken stock in a medium saucepan over medium heat. Once boiling, whisk the polenta into the stock until it is completely absorbed. Remove the polenta from the heat and add in the salt, olive oil, parmesan, black pepper and butter. Whisk until the cheese and butter has melted completely. Add in the parsley and stir to combine.
5. Grill the broccolini: Place a grill pan over medium high heat. Drizzle the broccoli with olive oil and season with salt, black pepper and red chile flakes. Place the broccoli on the preheated grill and cook until lightly charred. Remove the broccolini to a bowl and toss with the balsamic vinegar.
6. Serve the chicken cacciatore over the polenta with a side of the grilled broccolini. Drizzle with olive oil and sprinkle with freshly grated parmesan

@@johnnunn8688 You don't get it so I will explain the joke to you. Gordon says it all the time in every video unnecessarily. I quoted the word because I am quoting him saying it. Went right over your head. I did not use single quotes either, that is incorrect. I used double. You also asked me a question without a question mark to finish the sentence. Just pointing that out since you are trying to correct someone's grammar and failed yourself.

This was my first time watching Gordon Ramsay. I remember seeing commercials of him yelling at everyone so I never bothered to tune in. Gordon did a marvelous job teaching how to make chicken cacciatore. He was a complete gentleman and this was a wonderful tutorial. I will be making this recipe.

I am a Chef and sometimes I am not a fan of some of his recipes. However I am going to give him some Props for this Recipe, Very Nice. And for up and coming Chefs I recommend learning how to utilize Fresh Herbs. It makes food taste So Much Better!!!

Great take on one of my favorite Italian dishes. I love that Gordon used cherry tomatoes, because those little babies are packed with flavor. Chef's special trick, that one.

Glad to say this is fairly similar to my version. Brown the chicken pieces, then make a soffritto with onion, celery, carrot, Italian herbs, and anchovies. Add mushrooms. add then cook off the tomato paste. add red wine and reduce. Chicken stock, reduce. Canned tomatoes. Add pitted Kalamata olives. Add chicken back in. Season (not too much salt as the anchovies do that job). Oven for quite a while to reduce and cook the chicken through.

Made this. Astonishingly simple yet crazy tasty. Can’t wait to get my annual cherry tomato crop in to serve this for a large group. Used boneless skinless thighs and not sure I miss the chicken skin. Sauce is amazing and the broccolini is simple and excellent. Cut its balsamic in half and it was still almost too much. So good! Thx, Chef!

Awesome recipe! First chicken cacciatore recipe I enjoyed making, First time I made polenta, first comment I heard from someone was "the polenta is so creamy!" Thank you! I don't have a gas oven or a grill, but I broiled the "Broccolette" turned out brilliant! I can't wait to make this again with my induction oven!

Gordon is the fucking greatest chef out there. He makes the complex, quite easy. With practice, we can achieve that high level of greatness, with food. I thank this guy forever. He's hilarious, brutally honest and just a sheer pleasure to watch. Hope to meet him someday. To have one of his meals is a dream of mine.

My mother would serve this over mashed potatoes rather than polenta when I was a child... one of my favorite winter meals she made. I'm going to have to try it with polenta!

Love your dishes. Please can you do some easy dishes for oldies who live alone. Some of us do not go out to dinners but have to cook out own meals. We cant stand long in the kitchen. Please Gordon it really would be appreciated. ❤

Thank you for showing all the cooking techniques. Avoiding hot oil splashing on one's arm is very helpful as with finishing cooking the chicken in the oven while preparing the side dishes to allow the whole meal to arrive on the plate at a consistent temperature.

That dish looks amazing!! I love using chicken thighs for cooking - they have so much flavor. I stopped cooking with chicken breasts when I tried boneless chicken thighs.

These videos reveal a pretty key chef secret to getting things to taste good: Butter, and lots of it. I wouldn't recommend eating that much daily, or even weekly but damn it elevates any meal.
