Of course, the reason why hes known for yelling at people is because the people in his shows are "Self-Proclaimed Chefs", and him seeing them make basic mistakes and calling themselves chef is sort of disrespecting not only him but other chefs as well. So of course he would go off on them.

The best kind of leader. I can't speak for cooking but, during my time in the US Army, I had an NCO like that. When he said he wouldn't expect of us what he wouldn't do himself, he meant it. Hell, he even put his money where his mouth was and rucked with us in preparation to go and earn our Expert Field Medical Badges. Best damn leader I ever had. I would follow that man into the fires of hell no questions asked and with a smile on my face.

Very cool video! I miss Cambodia & I miss Amok! When I lived there I met an Englishman who owned a guesthouse in Kampot. Over a few beers at his bar, he revealed himself to be an instructor of chefs, in Europe, and explained to myself & two other foreigners why Cambodian pepper was the 2nd greatest pepper in the world; his being the best. His pepper is, in fact, Cambodian pepper which he performs a unique development on, prior to and during the harvesting/curing phases. I never thought that I'd find myself sitting in a bar in Kampot, being educated on pepper! Cambodian cuisine, sans the deep-fried insects, has really not had it's due on the world stage.

It's amazing how serious he takes all of this. He takes cuisine and culture seriously while holding himself to the same standard he holds others to. Nice. Good stuff.

Asian cuisine is the most complex in the world. That’s why Gordon Ramsay is so humble in his asian tour
