For those who likes fishing. It's quite a fun thing to do I suppose, putting a bait in the ocean and a live thing comes and bite it, drag it up and it becomes a free meal, a test of patience rewarded. Would you now willingly hook a bird, a guinea pig, or a rabbit or some other land animals as big as some of your biggest catches in the sea, then drop them into the sea and force them to drown? I don't think you would, because it's monstrous and ghastly. That is exactly the same with fishing except it's just the opposite, sea animals lack lungs made for land, and land animals lack lungs made for sea. You see them less as they are in the sea doesn't make them disposable or deplorable and has a lesser capacity for living. Why do some people rush to rescue whales that beached themselves in public then proceeds to fish the smaller ones out of the sea?

Not to me, super high level chefs like Gordon know how to cook even simple, basic one-ingredient things like a fresh salmon REALLY well. There IS a difference in quality when you're THAT that good. I sadly just moved from the Pacific Northwest and away from amazing coho and chinook fishing. The guy mentions that the salmon Gordon cooked “melts in your mouth” and he’s not kidding. It was a day old catch too. When you catch them and immediately clean, filet, and cook them the meat doesn’t flake apart, it does seem to melt in your mouth. The taste and texture is unlike anything you can find elsewhere.

Fresh fish is just amazing. Any fish you can find in a freezer at your market, it tastes worlds better fresh from the water! My first experience with salmon was frozen and it was alright, but I didn't see why people enjoyed salmon so much. Then I had one that was caught that morning and it was just a simple pan-fry like this, but it was incredible. So tender and flavorful, the color of the meat was beautiful, it filled the whole kitchen up with this amazing smell. It's a fish you don't have to do pair with a whole lot of seasoning or sauce because it just tastes great!

In 19th century and early 20th century, salmon was for the servants in the big houses. The servants complained that they had salmon far too often. Polluted rivers, trawling at sea, nets across the rivers - very few salmon of any species and extremely high prices for fishing the privately controlled stretches of river while staying in extremely expensive hotels and only allowed to keep one or two fish
