I got some bad batches of sugar, I could feel huge crystals while I was sifting it, so of course it messed up my buttercream. I could feel the crunch of the sugar when I taste-tested. Anyway, I took a cup or 2 of the buttercream and microwaved for about 20 seconds. Then I added it back into the original buttercream. It definitely helped a lot, so thanks for the inspiration!

I made a peanut butter / butter frosting, and it took on a rather elastic property, when I tried to spread it. I have never seen anything like it. I did use a "big box" store brand...not too sure if it was beet sugar or cane...but will remedy what I purchase from now on!! Thank you chef!!

Oh My God, chef Toby YOU ARE A GODSENT! It's almost 1 And I have baked the perfect cakes, I'm decorating very elegant, it's going to be gorgeous! It's my grandmother's 90th birthday celebration! And since I'm the baker, you can guess. I've been struggling with my buttercream and I think it's cause I'm just now over thinking from stress. But came across this video and now it's a miracle! It's perfect just like you said! From the bottom of my heart...I truly thank you! I pray all of God's blessings upon you!

Thankyou you saved my granddaughter’s birthday cake I had also run out of icing sugar used the last I had to make this batch and living out in the hills a store is definitely a very long trip for just icing sugar about 83 miles to nearest store and their never guaranteed to even have it when I get there I was in complete panic mode and about to cry the party was later this day but I can’t thank you enough your brilliant Thankyou again!!!

Hello, I am glad I found this video... I am just starting to bake and I am having troubles with my buttercream. It always comes out grainy at the taste with sugar melting on the tongue (texture looking good though). I used to grinded my powder sugar and sift it but nothing to do. I will try this new technique and I will come back with my comment.

Can you do a video to show which brands are good for buttercream and how to dye for vibrant colors? Not only can I not get my buttercream to stay together I cannot get it to take dyes well.

Thankiu for this amazing video, I'm gonna try it because I'm about to throw a huge amount of buttercream, I just have a question, at the beginning your buttercream was frozen? So I do that first. Right now I just put it the fridge so I can figure it out what to do it with it, thanx!

Hi you don’t have to freeze it. Mines was only frozen because I didn’t want to toss it and remembered how to repair it.

So tell me why, A lady said to not mix on high nor with the wire beater? 🤷🏽‍♀ she said that it cause air bubbles and the butter will seperate

Please tell me ASAP that can I microwave the grainy buttercream a bit( rather than on the water) and then whip it .. As I don't have stand to put the bowl over water...

Hi, Anna, I would just use a double boiler, it's pretty much the same ting. Place a bowl on top of a pot of boiling water. I wouldn't use the microwave because it's just far to hot in such a short period of time. You could give it a try but I rather use a double boiler just to be on the safe side.

Hi chef! Actually I just made buttercream and it's full of small sugar chunks so if I use double boiler like you then I don't have any high quality icing sugar left, now what should I do? Please tell ASAP!! Because guest bout to come in 2 hours 😢.......can I add meringue powder to harden up?

Allow the mixture to cool and whip on medium speed for a long period. It should turn back white once air is incorporated. Add a little powder sugar to thicken if it’s not thickening.

If you add cream to normal butter cream does that not mean it needs to be kept in the fridge rather than be okay to be left in box on side?

I always keep the entire cake in the fridge because butter is dairy and it could go sour. It’s safe if your room isn’t to hot. I only leave my cakes out in the winter as i normally keep my kitchen cold because I can’t function in a hot one. I hope this helps and thank you for stopping by.

My buttercream has a nice liquidy texture but when I taste it I can feel the sugar crystals. I've used fine powdered sugar and even sifted it. What do you think is going wrong, can't figure outt I've tried so many times🥺

Try whipping it for a long time and see what happens. Are you sifting the sugar before you make your frosting?

Hey chef, I haven't been able to make nice frosting and couldn't figure out why. The texture is pretty much liquid but still grainy from the sugar. I don't know what went wrong but it seems like the butter wasn't well-incorporated with the sugar (though I had room temp butter and fine powdered sugar, sieved before use). I wonder if I can fix them when that happen again.

Yes try this technique - whip it until it’s smooth then add more powdered sugar to thicken it up.

What happens the buttercream is soft coming out of the mixer but when applied to the cake it started get crusty.

That's normal, American buttercream (butter and powdered sugar) crusts when exposed to the air. Keep it air tight/wrap it with cling or try another buttercream recipe like Swiss Meringue or something x

When I have left over frosting that has been in frig and looks like that I microwave it and mine comes out cause that's what I thought I should do.

Usually in the fridge I just let it come to room temp and rewhip. This particular frosting was the end result straight after making it with store brand sugar and that was the end result. Life little secrets I tell ya 💜

No, I only mixed it about 3 minutes and it was a nightmare. I did my research in one of my books and found it it’s the sugar. When I worked at a bakery. We whipped our buttercream for 20 minutes to ensure it’s extremely light and fluffy.

I made this with monkfruit sweetener. And it came out grainy. So I'm going to try heat it a little bit and try mixing it again. But I don't have a fancy whipper like you. I am using a hand held mixer. Wish me luck or send me pointers. @emikwaanikwe

Aida Casubuan I do not own a hair dryer. This is not a problem I have often so a double boiler works fine for me.
