Gratinated scabbard fish rolls. Sicilian recipe

Ingredients for 2 people:
500 g Fillets of Scabbard Fish
60 g Breadcrumbs
2 Bread sandwich
40 g Pine nuts
1 cloves of garlic
20 Desalted Capers
1 sprig of parsley
1 Lemon
Raisis to taste
Extra virgin olive oil to taste
Salt to taste

The scabbard fish, also called spatula or flag, is a very popular fish in my region. It is a fish with very tender and very tasty meat. It is quite widespread in north-eastern Sicily and especially in the Strait of Messina. The rolls of this fish are a classic dish of this area of Sicily, rolls that have nothing to envy to the more famous swordfish ones. Its peculiarity is the very thin and very silver skin, synonymous with freshness and movement of the fish between the currents. Less silver and more brownish sabers can also be found synonymous with the fact that the fish has lived a more static and therefore less good life. Indescribable taste and scents if you don't try them.
