Welcome to my KZfaq video! In this episode, I'm lucky enough to share with you the chef's secret recipe from an authentic Greek taverna. Today I show you how to prepare a delicious Greek Eggplant Salad (Melitzanosalata) as a spread.
This spread is perfect for all aubergine lovers and fans of Greek cuisine. The creamy consistency combined with the Mediterranean flavors will enchant your taste buds.
We start with juicy aubergines that are oven roasted to intensify their natural sweetness and flavor. We then remove the skin and mince the tender aubergine flesh to a smooth consistency.
The chef from the Greek tavern shared his secret recipe with us, which is a blend of finely chopped fresh herbs, sun-kissed tomatoes, garlic, onions, high-quality olive oil and a few other secret ingredients. Together we mix all these ingredients into a creamy and tasty spread.

Ingredients:
2 eggplants
Fresh herbs (e.g. parsley, oregano)
1 tomato
1 clove of garlic
1 onion
1-2 tablespoons extra virgin olive oil
1/2 teaspoon salt
little chili
pepper

1 teaspoon lemon juice or vinegar
50 g feta cheese

Superrezept fuer Winter und Sommer, sehr komplett und schmackhaft, ich hatte noch eine viertel Avocado, die hab ich noch zugegeben. Salz habe ich nicht benutzt wegen Herzkrankheit, aber im Feta ist ja genug, Pfeffer und Chili, Oregano und Petersilie, Knobi bringen genuegend Geschmack. Machen Sie weiter, kann nur gutgehen!

Nice idea to leave less mess for peeling the Eggplant skin. I would generally scrape off the charred outer parts with a knife, will try with spoon sometime. We dont easily get an insect free eggplant where I live so to burn n eat the insects along with full eggplant doesnt feel like an exciting idea nowadays. Thanks for the recipe on spread.
