I made my own birthday cake this year and followed this recipe. My family and friends love the cake. Instead of 4 teaspoons of matcha I used 7 teaspoons because I wanted stronger matcha flavor. I used coconut biscuits instead of plain digestive biscuits as a base. The cheesecake is not heavy, not too sweet and is easy to make. Thank you so much for sharing this delicious recipe!

Did you use dairy or non dairy whipping cream . As i know dairy whipping cream need sugar to whip or did it not ? And can i use agar-agar powder instead of gelatin powder?

If I use gelatin sheet, is the order still the same ? Do I put gelatin into the entire mix or put it in the green tea whip cream mix first before folding cream cheese ? Do I need to heat up the mixture to dissolve gelatin? Thanks 🙏

Hello 👋 yes, the order will still be the same. I would soak the dry gelatin leaves in cold water for around 5 minutes, then I would squeeze out the water and then stir it into 70ml of warm water (same amount of water used in this recipe). Once the gelatin is dissolved, this would be stirred into the cheese mixture (same as the video) before you fold in the cream. In my video on how to make Panna Cotta, I use leaf gelatin so you could watch that if you are unsure about using it. Since leaf gelatin comes in different grades (or strengths), it would be best to look at the package instructions to see how much to use. Hope this helps!

Multiply the ingredients by 1.5 and that should work for a 9inch pan

Can this hold its weight in a hot humid climate like southeast Asia? I usually use less water for the gelatine so it'd be a bit more concentrated

I wanna know if the matcha taste is too strong or if it's light before trying it out! Whenever I make matcha tea it turns out too strong and bitter

The taste is just right, not too strong and bitter but not too gentle! Matcha tea on its own can be bitter but when mixed, it’s won’t be - hope this helps and let me know how it goes!

Hi Mayleen! I couldn't find the product online but if it can whip up into whipped cream and is unsweetend, then yes, it can be used. Hope this helps!

Green tea powder is supposed to be bitter if you taste it directly but as it’s only a small amount in the recipe, once you mix it with the rest of the ingredients you will end up with a nice fragrant green tea flavour

hi! may I know how can I mix the gelatine mixture and cheese mixture without making any jelly-liked things? cause sometime the gelatine mixture can't fully dissolve into mousse or cheese mixture T.T

Hi Wendy 👋 my tip would be to work quickly. Make sure the cream is already whipped before you add the gelatine. When you add the gelatine, whisk it straight it away and then fold in the cream quickly. It’s unlikely that the gelatine would set straight away because it needs time to set in the fridge so I wouldn’t worry about it too much! Hope this helps!

No the cream should be cold so it whips easier and the gelatine won’t heat up the cheese mixture so don’t worry!

Hello 👋 this depends on the strength/grade of your sheets e.g. silver grade/platinum grade etc. If you find out what grade your sheets are I could look into this for you. Alternatively it may say on the back of the packaging!

iSaamuel Hi sry for disturbing you again, how do i whisk the whipping cream? Becoz when i whisk, it turned into thick chunks (butter) with watery milk at the same time. Is it becoz i whisk for too long or is there a specific brand or type of whipping cream i need to use?

Hi there, when you whisk until butter forms that means you have whisked too much. My advice is to start off whipping the cream on the lowest speed setting of your mixer and the gradually increase to medium. Watch the cream carefully, once it starts forming trails whilst mixing it is nearly done. Carry on mixing just until soft/medium peaks form. As you can see whipping cream is actually a delicate process so a lot of care needs to be taken! If in doubt you can try other brands of cream but I think it is down to the technique. Try following my steps first and only try other brands as a last resort. Hope this helps!

Yes but the quantity you need to use may be different so use it according to the package instructions. Also the texture and how much it sets may be slightly different so try experimenting and seeing what works best for you! :)

i just made the cake with agar agar powder instead of gelatine powder! turned out fine :-) 1. whisk the whipping cream in a cold bowl 2. use 2 sheets of agar agar, cook it with the cream cheese, while constantly stirring (agar agar needs to be cooked, cream cheese gets burnt easily) 3. add sugar and matcha powder into the agar agar cream cheese, let that cool down, but not too much since agar agar gets stiff quickly, be careful :-) 4. carefully fold whipping cream into the cooled down but still liquidy agar agar cream cheese mixture

You could add lemon juice for a slight tang but there is no need if you were using it to set the mixture as there is gelatine, if that’s what you were adding it for. If you don’t have gelatine/ do not want to use it, I would recommend agar agar following the package instructions. Hope this helps!
