I don't have a panini press but I made a vegan panini last night on my George Foreman. Loved it!!!

Thanks, Laura for the video! This looks like a wonderful must-try combination! I bake my own sourdough about once a week because we love it and also makes good panini. My FAVORITE bread for panini, however, is homemade ciabatta because when sliced horizontally, all of those nooks and crannies hold vinaigrette without leaking. I looked at panini presses for several years but when Cuisinart came out with waffle plates for their Griddler, I was hooked; I bit and am still in love with it three years later.

I love how you can put anything in a Grilled Sandwich. I just finished my dinner after watching this video. I'd put Red n Green Bell peppers, jalapeno, olives. I grilled bell peppers and jalapenos together. And I also grilled slices of tofu. Awesomeness ! With garlic dip and chips on the side. Man I feel like having another one while typing this lol.

This is perfect! I'm the only vegetarian in a family of endless meat-eaters. I'm always trying to come up with dinners that each person can customize to his or her own pickiness- er, I mean, liking. And I could totally put chicken on theirs and some of these veggies on mine.

i used to make same kind of this panini but with tomato sauce and without mushrooms ,but this one look delicieuse and with more nutrients so i will try it, thank you Laura ^_^
