Grounded in the Bahamas - Exploring Staniel Cay and the Famous Thunderball Grotto! - Ep 19

Күн бұрынWe had a great time in Staniel Cay. Steph tries doing some good old fashioned hand washing/boat laundry for the first time and then we head off to The Thunderball Grotto which really is a must see when cruising the Exuma Cays. The underwater cave system was definitely an adult playground for us and we recommend going at slack tide.
The anchorage in front of the Staniel Cay Yacht Club was a bit shallow and we did run aground, luckily it was low tide and soft sand! Navionics lied to us for that particular area! Stay tuned til the end for the first "Steph Bakes" segment.

WHERE WE DROPPED ANCHOR
- In front of the Staniel Cay Yacht Club
CREAM CHEESE FILLED CARROT STREUSEL MUFFINS
(Yields: 12 medium or 6 jumbo muffins)
Ingredients for the Muffins:
1 can (14.5 oz) sliced carrots, drained
3/4 cup brown sugar
1/3 cup vegetable oil
1 large egg
1 cup all purpose flour
1/2 cup uncooked quick oats
1 tbsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 cup raisins/dried cranberries
Directions:
1. Preheat oven to 350 degrees
2. Place carrots in a large mixing bowl and mash them until tiny pieces
3. Add brown sugar, oil and egg and mix well
4. Add flour, oats, baking powder, cinnamon and salt. Mix just until the dry ingredients are moistened. Do not over mix
5. Fold in raisins/cranberries
6. Spoon batter into paper-lined muffin tray - half full only if adding the filling
7. Place cream cheese filling in the middle
8. Top remaining half of muffin cup with batter (make sure you cover all the filling to avoid leakage)
9. Top with streusel mixture
10. Bake or 25 mins or until an inserted toothpick comes out clean. Leave in the muffin tray for 5 minutes before removing and placing on a cooling rack
CREAM CHEESE FILLING
Mix 1 tbsp softened butter/margarine,
3 tbsp softened cream cheese, 1/4 cup icing sugar, 1/2 tsp vanilla extract until smooth.
Spoon onto a plate in rounded teaspoons
Freeze at least 1-2 hours - ready when they are no longer runny and hold shape when placed in the muffin
PECAN STREUSEL
Mix 1/4 cup flour, 1/4 cup brown sugar, 1/4 tsp ground cinnamon
Cut in 2 tbsp butter until crumbly
Mix in 1/4 chopped pecans

10:30 at night when I watched this. The muffins will have to wait till tomorrow. $9/ half gallon. Wow. And I get upset when I have to pay more than $4.69 a gallon. The grotto was amazing.

Tried the muffins. Funny story, right out of the oven my wife and I thought they tasted not so good. So she was going to give them away to her walking girls the next morning lol. The walking girls told my wife they tasted great. That same morning i tried another one and it tasted great. When she got home she told me what happened and i said i agreed. So for some reason we didnt like these fresh out of the oven. But we like them now. lol

The collapsible plastic washing plunger is totally worth the money. It really works to agetate and swirl the water in the bucket and spin the clothes with minimal effort. You can do a lot more laundry at a time in the bucket too with less work than reaching your hands in. It's also a lot easier on your back. We also have an all stainless and rubber wringer which makes wringing the soapy water out much more efficient and saves a TON on the amount of rinse water used. It also dries much faster after wringing all the rinse water out too. A ridiculously expensive bit of kit though, for something we only use when there are no laundry facilities. When I saw the big clouds of silt made by your prop when you were stuck in the intro I thought at first you were dumping your septic tank and filming it. LOL -that would be funny to show on KZfaq.

Next time you try to tow something with the dingy, move your tow line to the bow and have it run down the side of the dingy. With the two line at the stern you can't pivot the engine against the drag of the tow line to get any leverage and steer in the direction you're trying to go.

I see the sticker shock when people visit places where the production of milk is not subsidized by the government. I live in the US and if the milk was not subsidized it would cost $8 a gallon.

1 can sliced carrots, drained is a poorly defined measurement. Carrots come in lots of different sizes and types. And while I think you're using a 15oz can, you're not in the US and it's hard to know whether it's 15 oz or something somewhat larger or somewhat smaller.
