We had a great time in Staniel Cay. Steph tries doing some good old fashioned hand washing/boat laundry for the first time and then we head off to The Thunderball Grotto which really is a must see when cruising the Exuma Cays. The underwater cave system was definitely an adult playground for us and we recommend going at slack tide.
The anchorage in front of the Staniel Cay Yacht Club was a bit shallow and we did run aground, luckily it was low tide and soft sand! Navionics lied to us for that particular area! Stay tuned til the end for the first "Steph Bakes" segment.

WHERE WE DROPPED ANCHOR

CREAM CHEESE FILLED CARROT STREUSEL MUFFINS
(Yields: 12 medium or 6 jumbo muffins)
Ingredients for the Muffins:
1 can (14.5 oz) sliced carrots, drained
3/4 cup brown sugar
1/3 cup vegetable oil
1 large egg
1 cup all purpose flour
1/2 cup uncooked quick oats
1 tbsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 cup raisins/dried cranberries
Directions:
1. Preheat oven to 350 degrees
2. Place carrots in a large mixing bowl and mash them until tiny pieces
3. Add brown sugar, oil and egg and mix well
4. Add flour, oats, baking powder, cinnamon and salt. Mix just until the dry ingredients are moistened. Do not over mix
5. Fold in raisins/cranberries
6. Spoon batter into paper-lined muffin tray - half full only if adding the filling
7. Place cream cheese filling in the middle
8. Top remaining half of muffin cup with batter (make sure you cover all the filling to avoid leakage)
9. Top with streusel mixture
10. Bake or 25 mins or until an inserted toothpick comes out clean. Leave in the muffin tray for 5 minutes before removing and placing on a cooling rack
CREAM CHEESE FILLING
Mix 1 tbsp softened butter/margarine,
3 tbsp softened cream cheese, 1/4 cup icing sugar, 1/2 tsp vanilla extract until smooth.
Spoon onto a plate in rounded teaspoons
Freeze at least 1-2 hours - ready when they are no longer runny and hold shape when placed in the muffin
PECAN STREUSEL
Mix 1/4 cup flour, 1/4 cup brown sugar, 1/4 tsp ground cinnamon
Cut in 2 tbsp butter until crumbly
Mix in 1/4 chopped pecans
