If only I could wait until Dec to plant mine. I live in the south and have to grow short day onions and I plant the seeds as early as August, transplant out in October (we have mild winters here) and harvest in May or June so nearly a year invested in my onions. This last year though I planted nearly 200 onion plants I got pretty much what looks like onion sets for most of them. Granted I don’t have much space and I’m working on that but I also fed them a lot, stopping once they hit bulbing stage (which is a good thing to do so I’ve been told). Very frustrating. This next year I plan to plant them out in a dedicated garden bed with very rich soil and lots of organic fertilizer and compost plus some extra nutrients and give them more space to get big. I’m hoping doing that instead of using grow bags will be better for their development. I may even save some of these smaller bulbs from this year and replant them next season like onion sets (which worked well for some small red onion bulbs from last year and they were the only ones that got BIG). Wish me luck! It will be my 3rd year growing onions from seed (or 4th? I forget).

I think she has videos specifically about this. If not, garden like a viking has great videos on this. They can store for more than a year depending on the variety, the more sulphuric and strong onions store better

F yea, everyone should grow good clean tucker. Food security should be by default. Even just the cost savings, the cost of buying the same quality of food as fresh each week is insane. $300 of organic food without tax for 3 hours average/week work is a win to me.
