Homemade Sausage:
Ingredients:
-40lb of ground pork
-few hand fulls of crushed cayenne pepper
-one handful of crushed spicy pepper
-2 jars of pepper paste
-handful of dried anise seeds
-sausage casings (cow or pig)
-~5 handfuls of salt
Recipe:
In this recipe all the measurements are by hand, so use the video as reference and create your own unique taste!
Step 1:
Weigh out ground pork to 40 lb and place on table. Next add in all your ingredients. Hold back on pepper if you do not want it too spicy.
Step 2:
After everything is mixed together form into balls, or whatever is easiest to go through your sausage press. Now begin filling your casing carefully cranking the press. Make sure you poke holes in casing so the air can escape. You can buy casing pre-cleaned.
Step 4:
After creating your sausage link tie it off with some string. Then tie it into individual sausages, see video for reference.
That’s all, a very easy and fun recipe to make with your family and friends!

Just awesome seeing all the Italian women going to work, I notice they did it by eyeing it, the salt ratio is 3% of the weight of meat, I looks like they covered that easy, they used pepper sauce for the acid, instead of red wine, salt and acid and fermentation takes place, they have done this it seems for so long, they know it off the top of their heads, just awesome.

Wowww amazing 👏 I'm allergic to pork unfortunately. So the question is can I substitute beef or chicken or mutton???? Pls respond..grazie

Honest to God I never tried it with anything other than pork but out of the 3 substitutes you mentioned, beef (or veal even) would probably be the safest bet, but you'd have to make sure you got it corse ground or ground it yourself and make sure it isn't too lean. You need the fat for when it hangs to cure.
