Yes, yes and yes. It was nice to hear to give NeevesKnives some love; great information. Your information was very helpful to the person looking for information. A few years ago I bought the Ruixin pro sharpening system. It was ok, but I really had to struggle to maintain an angle. The clamps would loosen, the angle was different side to side. I got the Work Sharp Ken Onion, then the grinder attachment and it works great but one slip up and your scales are….. Also there is the convex grind which is ok for some knives. This reminds me that another thing to buy is tape for your blade, and scale to protect them from clamp and stone scratches. I just got the TSPROF K03 with five diamond plates, the 2300 and 4000 Edge Pro diamond matrix stone and 2 micron Jende diamond emulsion and kangaroo strop. This is by far the best sharpening system I have used.

This is an excellent educational video. Thank you for making it and sharing it. I now understand the complexity of a guided system and am better equipped to search for one. Unfortunately, there is a lot of confusing information from guided system manufacturers. I appreciate receiving your recommendation of a system for home use. I have many knives from pocket to multitools to kitchen, and I constantly work on them to keep them sharp. I am not easy on my knives. As you said, I would like to buy once, not twice, as I have already invested in many tools. Thank you.

Not sure if others have said this, but the fine tune angle adjuster can be used to compensate the difference in stone thickness. There's a lot of videos out there explaining how it works, but that would save a ton of time when you swap out stones.

There are pros and cons to diamond and Japanese water stones. Water stones retain their cutting speed throughout the life of the stone where as diamond plates do not. Would have liked to see some more information passed on to the viewer besides your personal preferences in an informational video. Hello, "Knifey McKnifeface"; Thanks, pal, looks mostly like a good video, I'd already figured out that some steel sharpens better at 17° than 20°. We just have to try it, sometimes we have to experiment to find out for ourselves. I'd like to buy an angle controlled sharpening system but most of them cost way too much. Then most of them don't allow any adjustment, this hole or that but not user controlled. I've been using homemade wedges & by guess + by chance to try to get the angles I want. I sharpen hatchets like a I sharpen knives & I'll prolly sharpen my rehung axe that way, too. I think holding the same angle, by hand or by mechanical control is the key to sharpening. I've done the "scary shape" for hatchets & axes when I don't want to file an edge to shape. IMO most people obsess over sharpening, I get it, but it's not rocket science. I have a couple telescopes so the angle gauge you used would be good for aiming them. Which I wish you had posted a link to that, I could use a good one, most are not accurate. BTW, sharpening axes & hatchets is easier w/ a line scribed from the edge to the poll center. Keep up the good work. Have a GREAT day, Neighbor!

Im a norwegian fisherman. a sharp knife is a must for me. I dont have time for all this systems while being on the sea. Buy a course diamond rod, and a fine ceramic rod. Learn to be consistant with your angles, and you wil have a rasor sharp endge within 20 seconds. Want sharp knifes? Buy thin bladed knifes. want to have a nightmare knife? Buy thick knifes of some super hard material. you are welcome.

Field sharpening is essential for people work in wilderness. But think like this, you put precise and long lasting edge on your knives when at home, so they need less honing when in the field. And not all guided sharpening devices are this complex, Spyderco sharpmaker is a portable and simple guided sharpening device that contains in a relatively small polymer case. Additionally, it is exactly like what you mentioned, you can pick up an additional set of CBN or diamond coarse rods and with the included of medium and fine rods, then you will acquire a self contained sharpening system, capable to perform either a quick fix or creating a shaving edge. You can also take only the rod without the base and use it as a regular honing rod, if you want it even more portable. The base have screw holes so you can fix it to your boat and it won’t fall off during harsh weathers. The total cost won’t be over 200$.

Does anyone out there who knows what they're doing use a jeweller's loupe to monitor progress? Although they can be fussy to focus and need a good LED light source, I find them very useful to see in great detail what is really happening at the edge, and what you need to do to correct it. But I've never seen anyone discussing them. Cost is not an issue, as they're only a few dollars - easily the cheapest part of your kit.

Four Venev Orion stones arrived at my door this week, 80, 150, 240 and 400. All of these were advertised as being 6 millimeter thick, 3 mil stone and 3 mil backing plate. The 150, 240 & 400 have a stone thickness of 3.5 millimeter while the 80 comes in at 4 mil. Once again I am unable to progress through the stones, from the same manufacturer, without resetting my angle. 3 out of 4 is the best I have purchased so far, with Jende coming in at 2 out of 3. The 400 feels more like a 600 in my opinion although it takes out the gashes with ease. These stones do not absorb water, no matter how long you let them sit. At $88 a piece they certainly should have been uniform. At least the 80 grit was the thicker one. For anyone interested, the Venev stones work exceptionally well.

Great video!🙂 Just a note about resin based stones - they do actually also need occasional lapping & flattening, just like natural or composite stones. After some time, your coarse resin based diamond stones will wear faster with a lot of bevel setting of new knives, so they will wear out and thin out faster - leading to adjusting your sharpening angle between stones, just like you do in your video. It's a great & necessary habit to always adjust the angle between any stone - even if it's the same brand or even if you think its the same thickness. Question as a matter of interest - Why don't you use your Hapstone fine tuning adapter for fine tuning and adjusting your angle?
@knifeymcknifeface7166
@knifeymcknifeface7166 Жыл бұрын
I just lapped my Jende Resin Bonded stones for the 1st time, I still have a lot to learn. I wish I had known about silicon carbide before I bought the lapping plate. My aim here is to save people from the same mistakes I have made, mostly due to inexperience. To that end, I intend to make a lapping video. The "fine tuning adapter" is akin to the Clapper, both perform a function(however useless said function may be). Can you use a Clapper to turn the lights on? Yes. Do you need to pay $19.95, plus shipping and handling, to turn your lights on and off? No. Should a man pay $24.50, plus shipping and handling, for a "fine tuning adapter"? Hell no. The "fine tuning adaptor" is a gimmick which solely exists to extract a few extra dollars from naive customers.
@777edge
@777edge Жыл бұрын
@@knifeymcknifeface7166 The combination of a digital angle cube and fine tuning adapter makes a big difference in setting accurate angles and compensating for stone thickness accurately and fast. Yes, a fine tuning angle adapter could be considered a clapper gimmick and for that matter even a digital angle cube is strictly not necessary but both help improve and speed up your sharpening significantly. I get what you're saying, you don't specifically need the fine tuning adapter but using that cost analysis argument, then nobody would need a guided sharpening system at all, just bench stones and practice. But hey, great guided systems are available so why not use them. In my opinion the same thing applies to micro adjusting of your angles with a fine tuner.

You say a mirror polished edge for a kitchen knife won't cut paper.... That's not what I experimented. I actually finish all my blades with a 30.000 shapton glass stone (just for fun... And it doesn't surely take me hours doing that, just spend few minutes on a 3000 10000 30000 sequence after I've removed the burr created by diomond stones) and I get crazy sharp edges. I mean I get hair whittling edges, and I don't either see any difference in dulling speed compared to a corser finished edge. The only thing I noticed is that finest shapton glass stones used with edge leading motion tend to create micro chippings, but I solved it by using them with edge trailing motions. So I go back and Forth with 400 - 800 - 1500 - 3000, and then just edge trailing strokes with 10000 and 30000.

Beyond amazing. I'm used to $250 (each and I use 4 of them) Japanese water stones and an $800 guided sharpening system. If you want the best edge...wet stones . ..but you're gonna spend time and money. The difference between a wet stone edge and this device is maybe 5-10 percent. No one will ever notice. However.. make sure you don't take off too much material from your knife!

It took me 10 knife sharpenings and a couple of key videos to learn how to get a knife to shaving sharpness freehand, and I'm not even that good on keeping angle yet. You don't need a fancy system, just a 200-400 grit whetstone that was made in Japan, it may even be the budget one, and a piece of leather glued to a piece of wood and Chromium oxide compound to apply to the leather for stropping.

Totally unrealistic price for my needs. I have two £10 kitchen knives that need sharpening to a level that performs okay. I'm looking for cheap enough stones that will do the job of giving the cheap knifes a slightly good edge, no need to shave or cut paper. At the prices mentioned in the video, I'd be better off buying a new knife every couple of months, more cost effective anyway.

@@legion162 Lansky stones are as cheap as it gets, anything less will end up in the garbage can. Based on what you intend to do you will not need a replacement stone for several years. Once you master getting a nice edge with the Lansky it will become apparent to you how horrible cheap knives are, your edge will not last very long. Consider looking for an old kitchen knife at an antique store or on Ebay. A knife made from high carbon steel (pre stainless) will hold an edge. Try to find one made from 1095. Just take some 220 grit sandpaper and rub any rust off. After you have cleaned it up use a few drops of olive oil about once a month and the rust will not return. If you go this route you will certainly never need a replacement stone. The average person considers a kitchen knife useless if they cannot put it inside of a dishwasher.
