Well it was meant to be a tragedy, everyone has different tastes. Some people will find it more tragic that he survived and didn't die with her. Plus Gai and Mana had already died together so doing it again would be redundant. They probably just wanted to end on a slightly more hopeful note

+Theodore Dragneel inori isn't dead. inori is only a recipient. the body is of mana. but inori has a soul a heart so at the end she given the cat'a Castel to Shu. this is why she would stay with shu forever. when at the end they are together ( when Shu listen the inori's music) they are not fisically but psycological. Shu has sto souls. inori is not dead.
