Gumbo Z'herbes = Green Gumbo = Cajun Vegetarian Gumbo = a flavorful pot of cooked greens. Using a roux and holy trinity, you'll stew a few pounds of your favorite greens into a delectable stew. Which types of greens are best for boiling into stew? Literally all of them: turnip, mustard, collard, dandelion, spinach, chard, beet, kale, parsley. Traditional green zaz can sometimes include smoked ham hock. Leave it out for a vegan/vegetarian gumbo recipe. Freeze green gumbo for a nutritious bowl of flavorful Southern boiled greens any time. Ingredients:
1 cup peanut oil, lard or other vegetable oil
1 cup flour
2 cups chopped onion
1 cup chopped green bell pepper
1 cup chopped celery
4 cloves garlic
2 bay leaves
1 Tbsp Cajun seasoning (like Tony Chacheres)
10 cups water, boiling
3 pounds assorted greens (i.e. kale, collards, mustard greens, turnip greens, spinach, chard, parsley, dandelion greens, beet greens), chopped (about 14 cups)
Salt
Recipe summary: Clean and chop the greens. Heat oil and flour in a small pot over low heat for 40-60 minutes, stirring often (making the roux), until it's the color of chocolate. Add the roux to a large pot over medium heat, add in onion, bell pepper, celery, and cook until softened. Add in garlic and cook for a couple more minutes. Add in water a couple cups at a time, stirring as you go along. Add in greens and stew for a long, slow time, at least an hour.

Best looking Gumbo Z'herbes on youtube in my opinion I shall try. It has that traditional African cuisine appeal.

Thanks! I agree on the traditional appeal. It’s why I decided to make this recipe rather than try to “de-meat” regular gumbo. Honestly I loved everything about this one.

@Bamana History and Culture Exactly!! It definitely does, and as someone who is Bamana, you would know 😊 The Bamana/Bambara, Mandinka, and Fula were some of the largest groups to be enslaved in Louisiana, Arkansas, and South Carolina. You can definitely see the culinary influences

I am from New Orleans and I grew up eating gumbo of every kind and this was a traditional meal on Good Friday in the season of Lent and I have very fond memories of it. Thank you so much for your yummy recipe. I am a huge fan of gumbo.❤👍👍👍👍😋😋😋

This is a nice video and recipe. I made a gumbo aux herbes yesterday and we waited until today to eat it. I used about a third of the amount of roux that you used. It still came out really good. I garnished it with some vegan style bacon and some scallions. I also used the same Tony Cachere spices as you plus some extra drops of hot sauce.

@@CookingCompanionTV Collards, kale and spinach. When I made it before, I used rainbow chard and it had a nice flavor too. I love this dish because it has a deep and soulful flavor to it.

The whole point of gumbo des herbes was to eat a meatless dish during the lenten season. I see too many variations of this dish. Different takes on this dish diminish the intent of eating the dish, and the loss of tradition.

Catholic creoles would eat it on Holy Thursday , needed a lot of meat cause they wouldn’t eat anything on Good Friday.

@@RRR-pj8cr That was (is) not true of all creoles. Which group of creoles are you referring to? You do know that creoles in Louisiana do not accept all who call themselves creoles as creoles. This is a historical truth in Louisiana.

@@rogerjeanice8685 yeah I’m not going to argue with you about creoles or history. My only point was to add to what was said in original post about the gumbo. Gumbo zeb as my family always called it, cooked it with meat always. Not sure where you are from but in New Orleans area that’s how it’s made. Now I’m sure some do it without meat that’s fine too. About the catholic creoles cooking it... well that’s just what I’ve always been told. Born and raised live my whole life in New Orleans area.
