海南粉有两种：一种是粗粉，一种是细粉。
煮卤汁这一步很关键，卤汁是海南粉的灵魂所在
海南粉多味浓香，醇香满腹，柔润爽滑，刺激食欲，故多吃而不腻，
爱吃辣的加一点辣椒酱则更起味,更是让人回味无穷。
佐料:粗米粉和细米粉、加入炸花生米、豆芽、葱花、韭菜、酸菜、香菜、红萝卜、竹笋、
猪肉丝、腊肠、鱼饼、鱿鱼干和牛肉干等配料，
海南粉卤汁
材料: Ingredients:
虾米 - dried shrimp
猪肉 - meats
鸡精汁 - Concentrated Chicken Stock
鲍鱼汁 - Abalone Sauce
蚝油 - Oyster Sauce
辣椒酱 - chili sauce
番茄酱 - tomato sauce
南乳 - fermented red bean curd
酱油 - soy sauce
豆瓣酱 - Bean Sauce (Taucu)
黄豆酱 - soybean paste
胡椒粉 - white pepper
五香粉 - five spice powder
腌制一个小时
沙茶酱 - Shacha sauce
盐 - salt
糖 - sugar
全部放下去炒一炒,爆香 ,然后倒水下去 ,
最后玉米粉(勾芡)

Can understand the Hainanese, the tone is just a little different from 文昌. Many years ago, I remember ate a beef noodle with that kind of sauce in Singapore. So good that I still craving the taste!

Cuz the stove using wood may be more economical (recycling the waste wood such as disposal-wooden chopsticks), on the other hand, the food cooked through this kind of stove tastes good, which is far more different from a gas stove. ：）

好懷念海南粉的味道。下次有機會建議你到海口試試，海口的很地道，而且海口還有另外種醃粉（抱羅粉）也很好吃。這集滷汁的部份漏了前半部好像，請問滷汁是怎麼做的，看到的時候已經是勾芡了
