LEI CHA PASTE 擂茶
(Thunder tea soup base)
The custom of eating Lei Cha is believed to have started during the ancient Chinese Han dynasty.
This is also call thunder tea rice which is a meal of many vegetable dishes served in a beautiful soup and rice.
Most people love this meal but this is hardly made at home because it is perceived as very hard to make.
I made two videos for this meal partly to show how easy is the 'difficult ' part and also one video would be too long. I will post my next video tomorrow.
The most delicious part of this meal is the soup which I like to make extra paste and refrigerate as a soup base.
The paste will be good in the fridge for up to two weeks and in the freezer for up to 2 months. A few tbs of the paste in a mug with hot water will make a great soup!
I sometimes use cashew nuts for the soup but I prefer the stronger flavour of peanuts.
The paste also make a great gift for friends.
