If you want that 'carved' look you could try using a ball point pen and draw in the foam. That's what I do all the time. You have to press firmly sometimes if you really want good lines but it's quite easy and fun.

I use a "fuse tool" or "low heat gun for sealing wax" LOVE THIS TUTORIAL!!

Is the same material as the white. I think is Eva foam/moosgummi.
