You tighten the rods by holding the rod that is going to be inside a cake, how do you tighten if you can't hold the bars? You even mention that there is a cake there and you grab the rod. Can you show with an actual cake?

I have to wonder hwo easy it actually is to tighten the tiers when you have cake on them.

what can you hang it on? mine is all real cake and could way close to 100lbs

I would have liked to see the assembly using the actual cakes. When stacking the plates I see you holding the rod in between plates to tighten the screws. this would not hard to do while sticking the actual cakes.
