Miso Glazed Carrots Serves 2 to 3 as a side dish (Very easily doubled or tripled for a crowd!)
Ingredients:
1 pound medium carrots, sliced on the diagonal into ½-inch pieces (Think long oval shapes.)
2 teaspoons light sesame oil, divided
¼ teaspoon kosher salt
For the glaze:
1½ tablespoons white miso paste
1 tablespoon light sesame oil
1 tablespoon pure maple syrup
1 tablespoon rice vinegar
2 teaspoons low-sodium soy sauce
2 scallions, white and light green parts only, finely chopped (save the dark green parts to thinly slice for garnish)
1 teaspoon black or toasted sesame seeds
1 teaspoon toasted sesame oil (optional)
Instructions:
1️⃣Pre-heat the oven to 425 degrees F. Line a baking sheet with parchment.
2️⃣Add the sliced carrots to a mixing bowl and drizzle with 2 teaspoons of the light sesame oil and salt. Toss to coat. Arrange the carrots on the prepared baking sheet, leaving a little bit of space between each one.
3️⃣Roast for 20 minutes until just tender and beginning to brown.
4️⃣Meanwhile, whisk all the ingredients for the miso glaze in a small bowl.
5️⃣Pour the glaze directly on the baking sheet with the carrots and toss to coat. Return the carrots to the oven for 10 minutes until they’re soft and the glaze has thickened and caramelized.
6️⃣Transfer the carrots to a bowl and top with the sliced green parts of the scallions and sesame seeds. Drizzle with toasted sesame oil if using.
