Another method is to bang the clusters in a box or pot. The ripe berries will fall off but the unripe berries will stay on. My Aunt would clip the berries off the main stems, clean the berries and put them into a steam juicer. She'd freeze the jugs of excess juice till needed.

Maybe. I’m not sure if it will thicken. You might need to use something else to get the texture of a syrup. Syrups are generally sugar. That would be a cool experiment. I bet you could use stevia and corn starch maybe I dunno

Is there any issue with RAW elderberries? Could we freeze/blend and refreeze the raw berries for better nutrition/enzymes intact?? I'm in zone 10 (san diego) and my elderberries are growing, but not prolifically the way yours looked.

You can eat them raw and I also eat them raw but there are anthrocyanins in elder berry that some believe can poison your red blood cells in high enough concentration. As long as you don’t eat more than a few berries a day you’re unlikely to get sick. Anything that has an affect on your body can make you sick. Raw poke berries are a powerful anti-inflammatory and can be used as ibuprofen but if you eat more than one or two it would damage your kidneys similarly to how eating too many ibuprofen would. There is no known therapeutic purpose for anthrocyanin so it’s hard to justify eating them raw unless you enjoy the flavor. To me they taste like kale flavored berries when raw unless they are super overripe. Overripe elderberry tastes like grape raisins mixed with blueberry which I enjoy. I just don’t talk about it because I don’t want someone who doesn’t understand to overdose on elderberry and get sick and blame me. Just be careful.

@@thechaosgardener thank you. I thought anthrocyanins were beneficial- but perhaps like arsenic- it's only 'therapeutic" to a point- like anything else. Thank you michael. Your kids are fortunate to have a father such as yourself- INTERESTED and curious enough in life to actually research the truth. Ah!! And Poke! I have so many of those, all volunteers and huge plants. When cooked /boil twice over, has very incredible healing /antiinflammatory properties (lymphatic system)- - i do see birds eat just one or two of the berrys and that's it- so they too must know- moderation. Everybody should be responsible for educating themselves- even if they trust the source- so i appreciate your info. greatly.

I have not made elderberry but i use coconut sugar in my mulberry jam.
