Some commenters on here need to chill out lol. Lots snarky know-it-alls out there. Yes, you may do things differently, or think you know more about something, but just accept this is how the person in the video does things. It's ok to give suggestions and information, but please be nice in how you do it. Kindness is always in style. Stay classy! :-)

"Le'me show ya how I......... DO IT!" that's my favorite (know it all) line from arrogant people....It goes right next to "Watch This!" which ends up being the last words uttered by 16 to 25 yr olds just be for the get killed doing something stupid....If they survive that phase then they move on to the "Le'me show you how I do it" phrase/phase.

I was taught canning hot peppers from my grandmother-in-law. I add garlic to the jars. Processing in a hot water bath makes the peppers soggy. Try this instead... Keep jars hot in boiling water - put peppers in the hottest tap water possible to bring up their temp - keep vinegar/water mixture boiling- keep lids in simmering water. Do all these while canning 1 jar at a time! You may want to get gloves as everything will be hot! (It doesn't bother me anymore) Lids will seal with this method and you will get a crunchier hot pepper!

Lids are not simmered any longer, they changed how they make them.

You don't need to worry about sweet pepper being hot because they are close to habaneros and such. You will only discover potential cross pollination when growing out the seeds from pods affected. There will be no changes on the first fruit.

I like how you said to put slits in the peppers before canning and explaining why. I never thought of canning them whole, I’ve always sliced them. I hadn’t tried mixing my peppers either. It’s silly on my part, because I’ve canned jalapeños and sliced cucumbers in dill brine to make hot pickles. Since seeing your video, I’m going to mix my sweet and hot peppers whole. I’m hoping we will like them, because it will make canning them a lot easier! Great video! Thank you for sharing!

I've canned for many years just never done peppers. I'd like to do some but add some non pepper veges as carrot sticks, green beans etc to absorb the flavor and add variety. Nice video. There is no need to heat lids, not needed for the past quarter century after they changed the old rubber seals to the newer compounds.

I’ve used your brine recipe before and got rave reviews. (I don’t eat most of what I can so I’m going with comments from my trusty friends who eat everything!) You make a great point about reading elsewhere for basic information about canning but because you’re showing your techniques as you go along I suggest you show how to wipe the rims before you add the lids. Also, tipping the jars to get rid of water on the top is a great way to loosen the seal over time. You can always lay a towel on top and gently pat the jars to absorb the water. Ask me how I know 🙄🙄🙄 Otherwise I can’t thank you enough for this recipe and video!

Cross pollination ONLY affects the seeds collected for next year's planting. It does NOT affect the pepper plants that are in the ground. The taste of peppers will not be affected. So don't worry about it.

I've made pickled peppers 3 years in a row and used 1 to 1 water and vinegar, I always find it too weak. 2nd question, where are you filming this, It could be in a restaurant, your kitchen with a loud tv in the background but to me it sounds like you are on a train!
