A Loco moco is the perfect weeknight 30-minute meal with a tasty cooked hamburger patty stacked high over rice with a delicious mushroom sauce and a fried egg. This Hawaiian comfort food will be a sure-fire family favorite!
Ingredients for this recipe:
• 1/2 peeled small diced sweet onion
• 2 finely minced cloves of garlic
• 2 pounds 80/20 ground beef
• 2 tablespoons soy sauce
• 2 teaspoons Worcestershire sauce
• 2 tablespoons oil
• 8 ounces sliced cremini mushrooms
• 3 tablespoons all-purpose flour
• 2 cups beef stock
• 5 eggs
• 5 cups cooked jasmine rice
• ¼ cups slice green onions
• sea salt and fresh cracked pepper to taste
Serves 5
Prep Time: 5 minutes
Cook Time: 25 minutes
Procedures:
1. Add the onion, garlic, beef, 1 tablespoon of soy sauce and Worcestershire sauce to a large bowl and mix until completely combined. Form into 5 patties and season on both sides with salt and pepper and set on a plate.
2. Add the oil to a very large frying pan over medium heat and once it begins to lightly smoke add the hamburger patties in and cook for 3-4 minutes per side or until well browned on each side. See doneness note.
3. Set the hamburger aside and drain off ½ of the oil used to cook the ground beef into a small frying pan and set the small pan aside.
4. In the large frying pan over medium heat add in the mushrooms and cook for 3 to 4 minute or until lightly browned.
5. Add in the flour and stir it in until it is completely combined,
6. Pour in the beef stock and cook for 3-4 more minutes over medium heat until it becomes thick like gravy.
7. Add back in the cooked meat patties and simmer over low heat.
8. Fry the eggs 1 at a time in the small frying pan in the rendered meat fat over medium heat for 30 seconds for a sunny side up egg.
9. Serve the beef patties and mushroom sauce over top of the cooked jasmine rice and top off with the fried egg and garnish with sliced green onions.
CHEF NOTES:
Make Ahead - You can make this recipe up to 2 hours ahead of time, simply keep the hamburger patties into the gravy while covered in a very low simmering heat. Likewise keep the rice warm.
How to Reheat - Add the desired amount of beef and gravy to a saucepan and heat over low heat until hot.
How to Store - Keep the meat and gravy separate from the rice, and cover and keep in the refrigerator for up to 5 days. Do the same and keep in the freezer for up to 2 months.
If the sauce is not to your desired thickness before adding in the cooked patties, simply add in a little slurry (2 tablespoons corn starch mixed with 1 tablespoon water).
Since there was a lot of oil in the pan after cooking the hamburger patties, I drained half of it into a small skillet and used it to fry the egg.
The meat patties do not need to be fully cooked through when browning them before removing them from the pan to make the gravy.
Cook the fried egg to your desired amount of doneness. It is recommended that the yolk be runny.

I made this for dinner this evening. Oh my goodness! It was a delicious hit. My hubby ate 2 patties and said, I hope this is going to be a regular on the home menu. Everyone else was so quiet I knew it was because it was excellent. Our people talk a lot…..lol

When i make this, I add 1/2 tble spoon of ginger and 1 tablespoon of Mirin(sweetened Saki) to the gravy. Fantastic.

I live in Hawaii... L&L Bbq makes the best loco Moco... No spam is never part of it, it's considered an add on or if it's part of a platter. It's usually served with Jasmine rice, two eggs, and gravy that's it. At home everyone does it different. Billy your addition of mushroom and onion is my husband loves topped with it when it's homemade. I'm on Oahu, so they may make it different on other islands. This was cool to watch you do one of my local favorite. Thanks Chef! 😋👩🏽‍🍳🍷♥️

Loco moco is my go to at any restaurant. Cafe 100 is home of the loco moco on the big island of Hawaii. A must try if you ever visit. They use all kinds of things instead of hamburger patties. But this looks killahs. 🤙🏽🤙🏽

Billy, invest in a small rice cooker by Wolfgang puck. All kinds of different things to make in it. Not just rice. But it’s easy. Just mix rice and water. Hit the cook button and it shuts off when it’s done 🤗

Just tried to make this, lol, had hamburger pattys and rice but realized half way through I didn't have eggs or beef stock or mushrooms. So ended up making a pretty nice burger and nice batch of rice for later.

The teenagers named the dish Loco Moco after one of their members, George Okimoto, whose nickname was "Crazy". George Takahashi, who was studying Spanish at Hilo High School, suggested using Loco, which is Spanish for crazy. They tacked on "moco" which "rhymed with loco and sounded good! 😄😄

All rice is different. Some don’t need washing, others do. Here in Hawaii we wash our rice til water becomes clear. This is to remove impurities and starch. If you go to Japan or any other Asian country…they always wash their rice.

if you want that authentic hawaii taste try finding some calrose rice, and definitely wash it until water is clear. (makes a huge difference) jasmine rice is good too but most places in hawaii doesn't serve it unless its a chinese/ thai/ viet ect place. everyplace I've ever gotten loco moco never came with spam unless you add it in. just fry um up on the side if you want. born and raised oahu, hawaii. probably ate atleast 1 loco moco a week ahaha lived 2 blocks away from the famous Rainbows drive in "loco moco plate, all rice, gravy all ova." local peeps know what im talking about 🤙🏼🤙🏼

Thanks for the rice breed comment. I’m still just not sold on washing rice to see a big enough difference. I’ve done it a million times and still can’t see it.

@@ChefBillyParisi the reason why we wash it is to get all the extra starch particles( also to make sure the rice is clean no bugs, dirt, etc..) there's nothing wrong-ish with not washing rice, you'll just end up with a more sticky result. if you ever make sushi and use premium grade sushi rice, you'll understand why we do so. great video! hopefully more people will be eating loco mocos 🤙🏼😁🤙🏼

Chef Billy Parisi if you grew up eating rice outside the US, in places where rice comes in a sack or bought in small amounts from a wet market you know you will need to wash it. The need, upon visual inspection, is undeniable (small stones, rice husks, bugs, etc), . Lucky for those who don’t think it makes a difference. This is clearly directed at that demographic.

@@ChefBillyParisi With Calrose you have to wash it or the cooked rice is too gooey (for my taste) Jasmine much easier to work with...but Calrose is OG and brings on the childhood memories...really a million times??? 😎

I used to not be a rice washer, bc I didn’t think it made a difference. I took a liking to Japanese medium and short grain bc I liked how chewy, yet separate, yet still sticky the rice was, and never went back. That starch that makes the water all cloudy tends to make the rice to sludgy. I grew up eating jasmine rice everyday and have applied this polishing technique with a little less water and it makes the jasmine have the same texture as Japanese rice, but with the added fragrance. The only rice I wouldn’t do this with is Basmati, which I think benefit more from the pasta method of cooking rice.

Nah the original recipe is a hamburger, brown gravy, sunny side up egg over white rice. Never heard of anyone using spam but I wouldn’t doubt it’s been done before. Living here in Hawaii, it’s weird to see people make rice using a pot haha. A rice cooker is pretty much a staple in the kitchen in these parts lol Ps: you should make spam musubi if you haven’t yet, another local staple here that is suuper simple, easy to make and delicious.

Yep, Josh. Most times, rather cook rice on stove so can brownish-black bottom rice.(Locals call that papa'a!) Never heard of Spam being used instead of hamburger patty but, to each their own prefer. I would prefer my onions cut into slices but Hey! That's just me...Good version, Chef!

FYI Maui onion and vidalia onion are pretty much the same, they both come from the granex family. Only difference is where it grows.

Versions of loco moco has been around since the 40's maybe earlier(just no fancy name then)...Spam was used during the war because it was available & inexpensive maybe a Maui thing...

it's a fundamental technique to wash your rice before cooking it. No one wants to eat all that dirt and sand.

Honestly most of it’s because people view on their phones and if you’re so far away it’s hard to tell what anyone’s looking at. I’ve since backed up a little bit especially the last six weeks or so

Washing the rice removes the starch from the grain which reduces that gumminess Spam was never traditional way, not sure where you got that idea? Maybe you thought it would bring an added Hawaiian flare to your speech?!? It looks ok, but you need more gravy and it needs to be a bit more runny but so Gelatinous

The only problem is that you ignored the fact that spam was part of the ingridient due to whatever personal (or cultural) idea that you had in your mind as a "chef"(or for some other better reason). This is totally dissapointing.

Omg you don’t wash your rice?! It’ll make it even fluffier, get rid of any empty shells of rice, and clean a bit of extra starch out. Sometimes there’s even bugs inside your rice packs that you can’t see. PLEASE WASH YOUR RICE

I’m just not sold that rinsing rice gets rid of enough of the starch. I’ve literally made a million batches of rice both rinsed and unrinsed and I don’t see a big enough difference to warrant it. So much rice nowadays is prerinsed. Not sure what the twitter comment means?
