but how to request from the despetcher taxiing by helicopter over the taxiways at the airport ..... Thank you

You need to ask the tower for an air taxi or relocate to your intended destination on the airport. The tower will then advise you of the route you should take, whether it be direct or following certain parameters.

What is the camera mount for the one that captures the cockpit? I'd like to know the setup

Suction cup mount to the roof window with a GoPro supplemented by a cameraman in the back too with a shoulder-mounted system.
