▷Ingredients（φ15cm × 2）：
■Tart
100g unsalted butter
50g powder sugar
Pinch of salt
1 egg yolk + egg white = 30g
165g cake flour
20g ground almonds
■Raspberry puree
150g frozen raspberry
40g sugar
5ml lemon juice
■Raspberry cheesecake
200g cream cheese
30g sugar
60g raspberry puree
4g sheet gelatin
25g hot water
130ml heavy cream
15g sugar
■Raspberry jelly
60g raspberry puree
20g hot water
2g sheet gelatin
■Topping
70ml heavy cream
Mint, dry framboise

This tart reminds me so much of a cake we have here in Chile "torta de yogurt". It's made with the same ingredients, but instead of cream cheese we use strawberry yogurt and strawberry jam, mix it with gelatin and then whipped cream. It makes the most delicious cake and its so airy and fluffy. It reminds me so much of my mom, thank you for bringing those memories back to me❤

i watched the entire video even though i knew i wouldnt be making them, because its so refreshing to have a video that i dont have to skip through the unnecessary chatter, listen to annoying, overpowering background music, and didnt have filler to draw the video out for time i like the clean, straight to the point, precise nature of this video

I love your videos! Right now I have a lot of stressful situations, but watching you doing this magic, it's soothing and calming and inspiring at the same time. I love it, how you choose to have only the calm baking noises instead of music in the background. This way one can choose to concentrate on those sounds or to choose music in the backgound (like me, some lo-fi right now). Thank you so much and please keep up!
