▷Ingredients:
■Tree part
3 whole eggs
60 g sugar
1 tsp vanilla extract
45 g cake flour
15 g unsalted butter
▷How to make:
1. add the sugar and vanilla extract to the whole eggs and whisk until combined. Beat the mixture in a hot water bath until the temperature reaches 30°C . Once the egg mixture is warm, remove from the water bath and whisk until white and fluffy.
2. Melt the unsalted butter in a hot water bath.
3. Sift flour into ① and mix until powdery.
4. Add a scoop of the dough to the melted unsalted butter and mix, then return to the dough and mix until the butter and dough are incorporated.
5. Place the mixture in a cooking sheet (27cm x 27cm).
Line a 27x27cm baking pan with a cookie sheet and pour the batter into the pan. Flatten the dough and bake in a preheated oven at 170℃ for 12 - 15 minutes.
6. Cut out the dough into pieces of 98mm/78mm/58mm in diameter.

75 g sweet chocolate
50 ml heavy cream
5 g unsalted butter
▷How to make
1. Roll out the tart dough to a thickness of 3 mm and refrigerate for 1 hour. 2.
2. Spread the dough into a 9cm x 3cm dia. mold, cover with plastic wrap, and refrigerate for 1 hour.
3. Roll out the excess dough to a thickness of 5 mm, and cut into Φ15 cm shapes. Chill the dough in the refrigerator for 1 hour.
4. Place the dough from ② on a cookie sheet, place a tart stone on top, and bake in a preheated oven at 180℃ for 12 to 15 minutes.
5. Bake the dough in a preheated oven at 170℃ for 15 to 20 minutes. Remove from heat.
6. Melt the sweet chocolate in a pan of simmering water, add the cream and unsalted butter in that order, and mix until smooth.
7. Fill the tart with fresh chocolate.
■Decoration
150 ml heavy cream
20 g sweetened condensed milk
1/2 teaspoon vanilla extract
Strawberries
12-15g sugar can be substituted for the sweetened condensed milk, and 2-3 drops of vanilla essence can be substituted for the vanilla extract.
■Sugar syrup
20 g sugar
20 g hot water
▷How to make
1. Beat cream, sweetened condensed milk and vanilla extract in ice water until stiff peaks form.
2. Wash strawberries, remove stems, cut in half lengthwise, and slice 3 or 4 of them into 5mm slices.
3. Mix the ingredients for the sugar syrup.
4. Spread a thin layer of whipped cream on the cooled tart dough, place a ø98mm sponge on top, and pour the syrup over the sponge. Sandwich the cream and strawberries.
5. Stick the halved strawberries on the outside.
6. Put the leftover whipped cream into a bag fitted with a star clip, and fill the space between the strawberries with the cream.
