This time, we came to "Daruma Shokudo" in Nagoya City because we heard that they have the only Jiro-style ramen available here.
The owner of this restaurant, Mr. Hioki, loves to cook and procure quality ingredients. Sometimes he purchases brand-name pork, Wagyu beef, Matsuzaka beef, duck, tuna, and many other ingredients. He also makes soups that make the most of the ingredients available at the time, and he is particular enough to make noodles that match the soup.
On the day of the event, the restaurant will be serving a subversive Jiro-style ramen with tonkotsu (pork bone) soup made from brand-name pork bones and "ibuki iriko," which is also used for udon noodles, and topped with tonkatsu , a pork cutlet made from brand-name pork.
Customers seemed to be looking forward to it, and there was a long line from before the restaurant opened until it closed. Many of the regular customers are "fans of the ramen here" and told us that they always look forward to seeing what kind of Ramen they can expect.
The concentrated pork bone broth was thick and sweet, and when combined with the homemade noodles and tonkatsu (pork cutlet), it was a taste I had never tasted before and filled me up! Thank you very much for the meal.
