Biblical wine was definitely not just grape juice. If it were, then Jesus' talk about new and old wineskins wouldn't make sense. I've also heard the theory that the wine was usually safer to drink than the water because the alcohol killed the germs, but I don't have any solid evidence to back that up. It's just something I've heard that seems to make sense. Bottom line, as someone else already stated, we believe we have been commanded to abstain from alcohol and therefore we do so in order to show our obedience to God. The author Brandon Sanderson once compared this practice to Jews not eating pork. Really, there is not much wrong with drinking alcohol or eating pork (in moderation), but if you've made a covenant with God not to partake of those things, then you better make sure you follow through simply because that's what you promised to do.
